🍽️ Crispy Breadcrumbs on White Asparagus with Oven Potatoes and Chive Dip

Ingredients
- small potatoes, mostly waxy 1 kg
- oil 2 tbsp
- white asparagus 2 kg
- chives, fresh 15 g
- salt pinch
- sugar pinch
- crème fraîche 200 g
- vinegar 1 tsp
- pepper, black ground pinch
- butter 3 tbsp
- breadcrumbs 50 g
Instructions
- 1. Preheat the oven to 220 degrees Celsius with fan setting.
- 2. Wash the mini potatoes thoroughly under running water.
- 3. Make two cross-shaped cuts into each potato, about 1 to 2 centimeters deep.
- 4. Place the potatoes on a baking sheet and drizzle them with some oil.
- 5. Place the potatoes on the baking sheet with the cut sides facing upwards.
- 6. Bake the potatoes for about 30 minutes until they are golden brown.
- 7. Wash the white asparagus under running water.
- 8. Peel the asparagus from top to bottom.
- 9. Remove the woody lower ends of the asparagus stalks.
- 10. Wash the chives and dry them thoroughly.
- 11. Cut the chives into fine rings.
- 12. Pour about 2 liters of water into a pot.
- 13. Season the water with salt and sugar.
- 14. Bring the water to a boil with the lid on.
- 15. Add the asparagus to the boiling water.
- 16. Let the asparagus come to a boil again.
- 17. Reduce the heat and let the asparagus cook for 12 to 15 minutes.
- 18. Put the crème fraîche into a small bowl.
- 19. Add the chive rings to the bowl with the crème fraîche.
- 20. Add some vinegar to the crème fraîche mixture.
- 21. Season the sauce with salt and pepper to taste.
- 22. Heat some butter in a frying pan over medium heat.
- 23. Add the breadcrumbs to the hot butter.
- 24. Add a pinch of salt to the breadcrumbs.
- 25. Toast the breadcrumbs for 2 to 3 minutes until golden brown, shaking the pan constantly.
- 26. Take the potatoes out of the oven.
- 27. Season the hot potatoes with salt and pepper.
- 28. Lift the asparagus out of the cooking water with a slotted spoon.
- 29. Place the asparagus and potatoes on the plates.
- 30. Add a spoonful of chive crème fraîche to the side.
- 31. Sprinkle the dish with the toasted breadcrumbs.
