  2. 2. Separate the eggs. Place the egg whites in a large bowl.
  3. 3. Beat the egg whites with a hand mixer until stiff.
  4. 4. Stir in 100 grams of sugar slowly while mixing.
  5. 5. Continue beating until the egg whites are glossy and creamy.
  6. 6. Whisk the egg yolks with 100 grams of sugar and a pinch of salt in a second bowl.
  7. 7. Mix flour, starch, and baking powder in a separate bowl.
  8. 8. Sift the flour mixture over the egg yolk cream.
  9. 9. Gently fold in half of the egg whites.
  10. 10. Briefly fold in the remaining egg whites into the batter.
  11. 11. Line a springform pan with baking paper.
  12. 12. Pour the batter into the pan and smooth the surface.
  13. 13. Bake the base in the oven for 25 to 30 minutes.
  14. 14. Finely chop 300 grams of white chocolate.
  15. 15. Heat cream in a pot over medium heat.
  16. 16. Let the chocolate melt in the hot cream for about 4 minutes.
  17. 17. Chill the chocolate cream for at least 4 hours.
  18. 18. Shave flakes from the remaining white chocolate.
  19. 19. Wash the strawberries thoroughly.
  20. 20. Set aside a handful of strawberries for decoration.
  21. 21. Remove the stems from the remaining strawberries.
  22. 22. Slice the hulled strawberries.
  23. 23. Whisk the chilled chocolate cream until creamy with a whisk.
  24. 24. Spread half of the cream over the cooled biscuit base.
  25. 25. Arrange the strawberry slices evenly on top.
  26. 26. Place a second biscuit layer on top.
  27. 27. Spread the remaining chocolate cream over the top layer.
  28. 28. Optionally fill the cream into a piping bag.
  29. 29. Pipe dots or patterns onto the cake.
  30. 30. Decorate the cake with the reserved strawberries.
  31. 31. Sprinkle the chocolate shavings over the top.
