  1. 1. Crumble the yeast into a bowl with lukewarm water.
  2. 2. Add the sugar and stir everything well.
  3. 3. Let the yeast mixture rise for about 10 minutes.
  4. 4. Mix the flour with one teaspoon of salt in a second bowl.
  5. 5. Add the yeast mixture and the oil to the flour.
  6. 6. Knead everything into a smooth and elastic dough.
  7. 7. Let the dough rise covered for about one hour in a warm place.
  8. 8. Clean the chanterelles thoroughly.
  9. 9. Halve the onions, peel them, and slice them into strips.
  10. 10. Drain the mozzarella and tear it into coarse pieces.
  11. 11. Stir the crème fraîche in a bowl with salt and pepper.
  12. 12. Wash the basil and shake it dry.
  13. 13. Pluck the basil leaves from the stems.
  14. 14. Preheat the oven to 225 degrees Celsius with top and bottom heat.
  15. 15. Divide the dough into four equal parts.
  16. 16. Roll the dough pieces on a floured surface into four circles, each about 24 centimeters in diameter.
  17. 17. Make sure the edge remains slightly thicker than the center.
  18. 18. Place two pizzas each on a baking sheet lined with baking paper.
  19. 19. Spread the seasoned crème fraîche over the pizzas.
  20. 20. Top the pizzas with mozzarella, chanterelles, onions, and sardines.
  21. 21. Slide the trays with the pizzas onto the lowest and middle racks in the hot oven.
  22. 22. Bake the pizzas for about 15 minutes until crispy.
  23. 23. Swap the positions of the trays in the oven after about seven minutes.
  24. 24. Take the finished pizzas out of the oven.
  25. 25. Sprinkle fresh basil over them and serve immediately.
