🍕 White Pizza with Chanterelles

Ingredients
- yeast, fresh 0.5 pcs
- water 250 ml
- sugar pinch
- wheat flour, Type 405 450 g
- salt 1 tbsp
- olive oil 6 tbsp
- chanterelles 250 g
- onions, red 2 pcs
- mozzarella 4 pcs
- crème fraîche 300 g
- pepper, black ground pinch
- basil, fresh 10 g
- sardines from the can 100 g
Instructions
- 1. Crumble the yeast into a bowl with lukewarm water.
- 2. Add the sugar and stir everything well.
- 3. Let the yeast mixture rise for about 10 minutes.
- 4. Mix the flour with one teaspoon of salt in a second bowl.
- 5. Add the yeast mixture and the oil to the flour.
- 6. Knead everything into a smooth and elastic dough.
- 7. Let the dough rise covered for about one hour in a warm place.
- 8. Clean the chanterelles thoroughly.
- 9. Halve the onions, peel them, and slice them into strips.
- 10. Drain the mozzarella and tear it into coarse pieces.
- 11. Stir the crème fraîche in a bowl with salt and pepper.
- 12. Wash the basil and shake it dry.
- 13. Pluck the basil leaves from the stems.
- 14. Preheat the oven to 225 degrees Celsius with top and bottom heat.
- 15. Divide the dough into four equal parts.
- 16. Roll the dough pieces on a floured surface into four circles, each about 24 centimeters in diameter.
- 17. Make sure the edge remains slightly thicker than the center.
- 18. Place two pizzas each on a baking sheet lined with baking paper.
- 19. Spread the seasoned crème fraîche over the pizzas.
- 20. Top the pizzas with mozzarella, chanterelles, onions, and sardines.
- 21. Slide the trays with the pizzas onto the lowest and middle racks in the hot oven.
- 22. Bake the pizzas for about 15 minutes until crispy.
- 23. Swap the positions of the trays in the oven after about seven minutes.
- 24. Take the finished pizzas out of the oven.
- 25. Sprinkle fresh basil over them and serve immediately.
