🍰 White Pizza with Fennel, Crème fraîche, Arugula, and Tomato Gremolata

Ingredients
- Fennel 2 pcs.
- Lemons 1 pc.
- Olive oil 4 tbsp.
- Salt pinch
- Pepper, black ground pinch
- Pizza dough with tomato sauce 2 pcs.
- Crème fraîche 200 g
- Garlic cloves 1 pc.
- Parsley, fresh 20 g
- Cherry tomatoes 250 g
- Arugula 100 g
- Salad seed mix 50 g
- Sugar pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Wash the fennel thoroughly.
- 3. Remove the hard base of the fennel.
- 4. Set aside the green fennel fronds for later.
- 5. Slice the fennel bulb into very thin slices or small pieces.
- 6. Cut the lemon in half.
- 7. Squeeze the juice from the lemon.
- 8. Place the fennel slices in a bowl.
- 9. Add one tablespoon of lemon juice.
- 10. Add one tablespoon of olive oil.
- 11. Season with salt and pepper.
- 12. Let the fennel pieces marinate for about five minutes.
- 13. Place the pizza dough on a baking sheet lined with baking paper.
- 14. Season the crème fraîche in the container with salt and pepper.
- 15. Mix the crème fraîche well until creamy.
- 16. Spread the crème fraîche evenly over the dough.
- 17. Distribute the marinated fennel slices on the pizza.
- 18. Bake the pizza for about 15 minutes in the oven.
- 19. Swap the position of the baking sheets halfway through the baking time.
- 20. Peel the garlic.
- 21. Finely chop the garlic.
- 22. Wash the parsley.
- 23. Shake the parsley dry.
- 24. Finely chop the parsley leaves.
- 25. Wash the tomatoes.
- 26. Dice the tomatoes very small.
- 27. Finely chop the reserved fennel greens.
- 28. Wash the arugula.
- 29. Let the arugula drain well.
- 30. Take the fennel seeds for the gremolata.
- 31. Add the fennel seeds, garlic, and parsley to a bowl.
- 32. Add two tablespoons of lemon juice.
- 33. Add the chopped fennel greens.
- 34. Add the diced tomatoes.
- 35. Add three tablespoons of olive oil.
- 36. Add a little sugar.
- 37. Mix everything well.
- 38. Season the mixture with salt and pepper.
- 39. Let the tomato gremolata rest for a short time.
- 40. Take the finished pizza out of the oven.
- 41. Distribute the arugula on the pizza.
- 42. Add the tomato gremolata on top.
- 43. Cut the pizza into small pieces.
- 44. Serve the pizza immediately.
