🍰 Christmas Nut Rolls with Cinnamon Frosting

Ingredients
- yeast, fresh 1 pc.
- water 2 tbsp
- agave syrup 160 g
- wheat flour, Type 405 500 g
- milk 400 g
- vanilla extract 1 tsp
- eggs 1 pc.
- salt pinch
- butter 100 g
- pecan nuts 100 g
- almonds, whole 100 g
- oat cookies 100 g
- cinnamon 2 tsp
- powdered sugar 40 g
- lemon juice 1 tbsp
- cream cheese, plain 100 g
- Christmas sugar decoration 14 g
Instructions
- 1. Put the yeast, the water, and 80 g of agave syrup into a large mixing bowl.
- 2. Stir the ingredients briefly until the yeast has dissolved.
- 3. Add the flour, the milk, the vanilla extract, the egg yolk, and the salt one after the other.
- 4. Knead the dough briefly.
- 5. Add the soft butter.
- 6. Continue kneading the dough until all ingredients are combined.
- 7. Pay attention to the consistency of the dough and adjust the amount of milk if necessary.
- 8. Shape the dough into a ball.
- 9. Let the dough rest.
- 10. Grind the pecans, the almonds, and the oat cookies finely.
- 11. Put the ground ingredients into a bowl.
- 12. Mix them with 80 g of agave syrup, cinnamon, egg white, and the milk.
- 13. Add only enough milk to create a spreadable mass.
- 14. Roll out the yeast dough with a little flour into a large rectangle.
- 15. Spread the filling evenly over the dough.
- 16. Roll the dough up from the short side.
- 17. Cut 15 equal-sized nut rolls from the roll.
- 18. Use a thin thread to avoid compressing the roll while cutting.
- 19. Grease a baking pan.
- 20. Place the rolls evenly distributed in the pan.
- 21. Place the pan with the nut rolls in the cold oven.
- 22. Set the oven to 180 °C top/bottom heat.
- 23. Let the yeast dough use the oven's heating time to rise further.
- 24. Bake the rolls for about 35 minutes.
- 25. Mix powdered sugar, lemon juice, cream cheese, and cinnamon in a bowl.
- 26. Spread the frosting as desired over the finished baked nut rolls.
- 27. Decorate them with the sugar decoration.
