🍰 Christmas Spice Jelly

Ingredients
- Organic lemons 1 pc
- Ginger, fresh 20 g
- Cinnamon stick 1 pc
- Apple juice 1 L
- Jam sugar 500 g
- Raisins 40 g
Instructions
- 1. Rinse the lemon thoroughly with hot water, peel off two thin strips with a peeler, halve them and squeeze out the juice. Peel the ginger and slice it thinly. Put the ginger, lemon peel and the cinnamon stick into a tea bag.
- 2. In a pot, combine the apple juice with the lemon juice, the spice bag and the jam sugar and bring to a boil. Add the raisins and simmer gently over medium heat for about 4 minutes, stirring constantly.
- 3. To test the setting ability, put a teaspoon of the jelly on a cold plate. If the jelly sets after about 1 minute, you can proceed with the rest. Otherwise, extend the cooking time by about 1–2 minutes and repeat the setting test.
- 4. Carefully skim off the foam that forms. Remove the spice bag and fill the hot Christmas spice jelly with the raisins into clean preserving jars. Close the jars and let them cool upside down. Enjoy!
