  1. 1. Wash the mint thoroughly and shake it dry.
  2. 2. Cut the lime in half and squeeze out the juice.
  3. 3. Quarter the watermelon and remove the flesh from the rind.
  4. 4. Set aside one nice slice for decoration.
  5. 5. Roughly cube the remaining watermelon flesh.
  6. 6. Place the cubed melon, sugar, and lime juice into a tall container.
  7. 7. Blend the mixture until smooth.
  8. 8. Strain the watermelon juice into a glass through a sieve.
  9. 9. Top up the glass with sparkling wine.
  10. 10. Garnish the drink with the mint and the reserved melon slice.
  11. 11. Serve the Bellini immediately and cheers!
