  1. 1. Thoroughly mix flour, egg, salt, and water in a bowl.
  2. 2. If the dough seems too dry, add more water spoonful by spoonful.
  3. 3. Knead the dough on a lightly floured surface until it is smooth and pliable.
  4. 4. Let the covered dough rest in a cool place for about 30 minutes.
  5. 5. Bring the potatoes to a boil in salted water.
  6. 6. Cook them covered over medium heat for approx. 20 minutes until soft.
  7. 7. Drain the potatoes and shock them with cold water.
  8. 8. Peel the potatoes and press them through a potato ricer while still warm.
  9. 9. Crumble the feta roughly with your hands.
  10. 10. Rinse the sauerkraut with cold water if necessary and let it drain well in a colander.
  11. 11. Place the feta and sauerkraut in a pot and mix them well.
  12. 12. Season the filling with salt, pepper, cumin, nutmeg, and a little sugar.
  13. 13. Divide the dough into two portions.
  14. 14. Roll out one portion very thinly on a lightly floured surface.
  15. 15. Cut the dough into approx. 16 squares with a side length of approx. 10 cm.
  16. 16. Lightly brush the edges of the dough squares with water.
  17. 17. Place some filling in the center of each square.
  18. 18. Fold the dough over the filling.
  19. 19. Press the edges firmly with a fork.
  20. 20. Place the finished dumplings on a floured board.
  21. 21. Cover them with a kitchen towel until all dumplings are filled.
  22. 22. Rinse the pot thoroughly.
  23. 23. Bring approx. 5 liters of salted water to a boil.
  24. 24. Cook the dumplings in the boiling water for about 5 minutes.
  25. 25. Carefully remove the dumplings from the water once they float to the surface.
  26. 26. Keep the dumplings warm.
  27. 27. Halve and peel the onions.
  28. 28. Slice the onions into rings.
  29. 29. Melt butter in a frying pan over high heat.
  30. 30. Fry the onion rings for approx. 7–10 minutes until golden brown.
  31. 31. Serve the dumplings with the fried onions on plates.
