🍽️ Wareniki – dumplings filled with sauerkraut and potatoes

Ingredients
- all-purpose flour, Type 405 280 g
- eggs 1 pc.
- salt pinch
- water 75 ml
- potatoes, mostly waxy 150 g
- feta cheese 75 g
- sauerkraut 150 g
- pepper, black ground pinch
- cumin, whole pinch
- nutmeg, ground pinch
- sugar pinch
- onions, yellow 4 pc.
- butter 3 tbsp
Instructions
- 1. Thoroughly mix flour, egg, salt, and water in a bowl.
- 2. If the dough seems too dry, add more water spoonful by spoonful.
- 3. Knead the dough on a lightly floured surface until it is smooth and pliable.
- 4. Let the covered dough rest in a cool place for about 30 minutes.
- 5. Bring the potatoes to a boil in salted water.
- 6. Cook them covered over medium heat for approx. 20 minutes until soft.
- 7. Drain the potatoes and shock them with cold water.
- 8. Peel the potatoes and press them through a potato ricer while still warm.
- 9. Crumble the feta roughly with your hands.
- 10. Rinse the sauerkraut with cold water if necessary and let it drain well in a colander.
- 11. Place the feta and sauerkraut in a pot and mix them well.
- 12. Season the filling with salt, pepper, cumin, nutmeg, and a little sugar.
- 13. Divide the dough into two portions.
- 14. Roll out one portion very thinly on a lightly floured surface.
- 15. Cut the dough into approx. 16 squares with a side length of approx. 10 cm.
- 16. Lightly brush the edges of the dough squares with water.
- 17. Place some filling in the center of each square.
- 18. Fold the dough over the filling.
- 19. Press the edges firmly with a fork.
- 20. Place the finished dumplings on a floured board.
- 21. Cover them with a kitchen towel until all dumplings are filled.
- 22. Rinse the pot thoroughly.
- 23. Bring approx. 5 liters of salted water to a boil.
- 24. Cook the dumplings in the boiling water for about 5 minutes.
- 25. Carefully remove the dumplings from the water once they float to the surface.
- 26. Keep the dumplings warm.
- 27. Halve and peel the onions.
- 28. Slice the onions into rings.
- 29. Melt butter in a frying pan over high heat.
- 30. Fry the onion rings for approx. 7–10 minutes until golden brown.
- 31. Serve the dumplings with the fried onions on plates.
