  1. 1. Put 200 grams of walnuts into the mixing bowl.
  2. 2. Grind the nuts for 10 seconds on speed 8 until very fine.
  3. 3. Pour the ground nut mixture into a bowl and set it aside.
  4. 4. Separate one egg: Remove the yolk and set the egg white aside in the fridge.
  5. 5. Add butter, sugar, a pinch of salt, the egg yolk, and the remaining egg (without shell) to the mixing bowl.
  6. 6. Beat the mixture for 30 seconds on speed 2 until creamy.
  7. 7. Add the prepared nut meal, cinnamon, and flour to the butter mixture.
  8. 8. Knead the dough for 2 minutes on the kneading setting until it comes together.
  9. 9. Shape the dough on a lightly floured surface into rolls with a diameter of about 3 centimeters.
  10. 10. Wrap the dough rolls in cling film.
  11. 11. Store the dough in the refrigerator for about 2 hours.
  12. 12. Preheat the oven to 175 degrees Celsius with top and bottom heat.
  13. 13. Slice the cold dough rolls into rounds about 1 centimeter thick.
  14. 14. Place the cookies on baking sheets lined with baking paper.
  15. 15. Brush each cookie with the reserved egg white.
  16. 16. Place half a walnut on top of each cookie.
  17. 17. Bake the cookies in the oven for 15 to 20 minutes.
  18. 18. Remove the baking sheets from the oven.
  19. 19. Sprinkle the warm cookies immediately with raw cane sugar.
  20. 20. Let the cookies cool down completely.
