🍰 Crunchy Walnut Cookies

Ingredients
- walnut kernels 250 g
- eggs 2 pcs
- butter 150 g
- sugar 125 g
- salt pinch
- cinnamon 1 tsp
- wheat flour, Type 405 330 g
- brown sugar 50 g
Instructions
- 1. Put 200 grams of walnuts into the mixing bowl.
- 2. Grind the nuts for 10 seconds on speed 8 until very fine.
- 3. Pour the ground nut mixture into a bowl and set it aside.
- 4. Separate one egg: Remove the yolk and set the egg white aside in the fridge.
- 5. Add butter, sugar, a pinch of salt, the egg yolk, and the remaining egg (without shell) to the mixing bowl.
- 6. Beat the mixture for 30 seconds on speed 2 until creamy.
- 7. Add the prepared nut meal, cinnamon, and flour to the butter mixture.
- 8. Knead the dough for 2 minutes on the kneading setting until it comes together.
- 9. Shape the dough on a lightly floured surface into rolls with a diameter of about 3 centimeters.
- 10. Wrap the dough rolls in cling film.
- 11. Store the dough in the refrigerator for about 2 hours.
- 12. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 13. Slice the cold dough rolls into rounds about 1 centimeter thick.
- 14. Place the cookies on baking sheets lined with baking paper.
- 15. Brush each cookie with the reserved egg white.
- 16. Place half a walnut on top of each cookie.
- 17. Bake the cookies in the oven for 15 to 20 minutes.
- 18. Remove the baking sheets from the oven.
- 19. Sprinkle the warm cookies immediately with raw cane sugar.
- 20. Let the cookies cool down completely.
- 21. Serve the cookies and enjoy!
