  1. 1. Take the butter out of the fridge so it reaches room temperature. Separate one egg and set the egg white aside. In a bowl, beat the butter together with sugar, salt, the remaining egg, and the egg yolk using a hand mixer until frothy.
  2. 2. Finely chop 200 g of walnuts. Add the walnuts, cinnamon, and flour to the mixture in the bowl and knead everything well. Shape the dough into rolls about 3 cm in diameter on a floured surface, wrap in plastic wrap, and place in the fridge for about 2 hours.
  3. 3. Preheat the oven to 175 °C (top/bottom heat). Then slice the rolls into about 1 cm thick discs and place them on baking sheets lined with baking paper. Brush with the egg white, place half a walnut on each, and bake in the oven for about 15–20 minutes.
  4. 4. Take the cookies out of the oven and sprinkle with cane sugar while still warm. Let cool and enjoy. Bon appétit!
