🍰 Crunchy Walnut Kisses

Ingredients
- walnut kernels 175 g
- eggs 2 pcs.
- lemons 1 pcs.
- salt pinch
- sugar 150 g
- cinnamon 0.25 tsp
- nutmeg, ground pinch
- baking wafers 25 pcs.
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan setting.
- 2. Place 150 grams of walnuts into a dry frying pan.
- 3. Toast the nuts over medium heat for two to three minutes.
- 4. Allow the nuts to cool down completely.
- 5. Chop the cooled nuts into small pieces.
- 6. Separate the eggs and set the yolks aside for another use.
- 7. Squeeze the juice from half a lemon.
- 8. Add the egg whites, a pinch of salt, and one teaspoon of lemon juice into a bowl.
- 9. Whip the mixture stiff using a hand mixer and whisk.
- 10. Slowly stir in sugar, cinnamon, and a pinch of nutmeg while mixing.
- 11. Beat the mixture for another two to three minutes until it is firm and glossy.
- 12. Gently fold the chopped walnuts into the egg white mixture.
- 13. Place wafer cookies onto a baking sheet.
- 14. Use two teaspoons to form small mounds of the mixture onto the wafers.
- 15. Quarter the remaining walnuts.
- 16. Press a walnut half into the center of each mound.
- 17. Bake the kisses in the oven for twenty to twenty-five minutes.
- 18. Remove the trays when the macarons are light and crunchy.
- 19. Allow the kisses to cool down completely.
- 20. Store the finished macarons in an airtight and dry container.
