  1. 1. Preheat the oven to 150 degrees Celsius with fan setting.
  2. 2. Place 150 grams of walnuts into a dry frying pan.
  3. 3. Toast the nuts over medium heat for two to three minutes.
  4. 4. Allow the nuts to cool down completely.
  5. 5. Chop the cooled nuts into small pieces.
  6. 6. Separate the eggs and set the yolks aside for another use.
  7. 7. Squeeze the juice from half a lemon.
  8. 8. Add the egg whites, a pinch of salt, and one teaspoon of lemon juice into a bowl.
  9. 9. Whip the mixture stiff using a hand mixer and whisk.
  10. 10. Slowly stir in sugar, cinnamon, and a pinch of nutmeg while mixing.
  11. 11. Beat the mixture for another two to three minutes until it is firm and glossy.
  12. 12. Gently fold the chopped walnuts into the egg white mixture.
  13. 13. Place wafer cookies onto a baking sheet.
  14. 14. Use two teaspoons to form small mounds of the mixture onto the wafers.
  15. 15. Quarter the remaining walnuts.
  16. 16. Press a walnut half into the center of each mound.
  17. 17. Bake the kisses in the oven for twenty to twenty-five minutes.
  18. 18. Remove the trays when the macarons are light and crunchy.
  19. 19. Allow the kisses to cool down completely.
  20. 20. Store the finished macarons in an airtight and dry container.
