🍳 Walnut Bread

Ingredients
- potatoes, mainly waxy 500 g
- salt 17 g
- yeast, fresh 0.5 pcs
- water 50 ml
- spelt flour, Type 630 500 g
- walnut kernels 200 g
- eggs 1 pcs
- nutmeg, ground pinch
- pepper, black ground pinch
Instructions
- 1. Peel the potatoes, wash them thoroughly, and quarter them. Bring to a boil in a pot with salted water and cook until tender for about 25 minutes.
- 2. In the meantime, dissolve the yeast in a bowl with lukewarm water and let it rest covered for about 10 minutes. Then mix the flour with the yeast water in a bowl and let it rise covered for about 30 minutes.
- 3. Heat a pan without fat over medium to high heat and roast the walnuts for about 2–3 minutes. Then let them cool and chop them coarsely.
- 4. Drain the cooked potatoes and let them steam dry. Then mash them into a bowl. Add salt, egg, nutmeg, pepper, and the chopped walnuts and mix well. Combine the potato mixture with the yeast dough, knead through, and let it rise again for about 30 minutes.
- 5. Preheat the oven to 180 °C (top/bottom heat). Fill the dough into a loaf pan and let it rise for another 10 minutes. Bake the walnut bread in the pan for 20 minutes. Then remove it from the pan and bake for another 20 minutes. Enjoy your meal!
