🍰 Crunchy Walnut Blondies with Cream Cheese Glaze

Ingredients
- chocolate, white 200 g
- butter 230 g
- walnut kernels 160 g
- sugar 140 g
- vanilla sugar 20 g
- salt pinch
- eggs 4 pcs.
- wheat flour, type 405 220 g
- baking powder 15 g
- oranges 1 pc.
- cream cheese, plain 120 g
- powdered sugar 120 g
Instructions
- 1. Preheat the oven to 350°F (180°C) conventional heat.
- 2. Chop the white chocolate into small pieces.
- 3. Cut 100 grams of butter into small cubes.
- 4. Melt the chocolate pieces and butter cubes together in a bowl placed over a pot of hot water (double boiler).
- 5. Remove the bowl from the heat and let the chocolate mixture cool down slightly.
- 6. Roughly chop the walnuts.
- 7. Add sugar, vanilla sugar, salt, and eggs to a large mixing bowl.
- 8. Beat the ingredients with a hand mixer and a whisk until thick and creamy.
- 9. Slowly pour the cooled butter-chocolate mixture into the egg mixture while stirring constantly.
- 10. Mix flour, baking powder, and the chopped walnuts in a separate small bowl.
- 11. Gently fold the flour mixture into the wet batter.
- 12. Spread the batter into a rectangular baking pan measuring approximately 20 x 25 cm.
- 13. Ensure the pan is lined with baking paper beforehand.
- 14. Bake the blondies for about 40 minutes in the oven.
- 15. Loosely cover the blondies with aluminum foil during the last 10 minutes of baking to prevent them from getting too dark.
- 16. Remove the pan from the oven and let the blondies cool completely on a wire rack.
- 17. Take the blondies out of the pan and remove the baking paper.
- 18. Wash an orange thoroughly.
- 19. Grate about one teaspoon of the orange zest finely.
- 20. Halve the orange and squeeze out the juice.
- 21. Beat the cream cheese and the remaining soft butter with a hand mixer until creamy.
- 22. Add the powdered sugar gradually and mix well until a smooth cream forms.
- 23. Add the grated orange zest and two teaspoons of orange juice to the cream.
- 24. Spread the cream cheese frosting evenly over the cooled blondies.
- 25. Garnish the blondies with additional walnuts if desired.
- 26. Cut the blondies into individual pieces and serve.
