  3. 3. Beat the butter with a hand mixer and the whisk attachment until creamy.
  4. 4. Add 70 grams of sugar, one packet of vanilla sugar, and a pinch of salt.
  5. 5. Mix the ingredients well together.
  6. 6. Beat the eggs.
  7. 7. Add the eggs to the butter mixture little by little.
  8. 8. Stir continuously while doing so.
  9. 9. Add the flour and the baking powder.
  10. 10. Add the buttermilk.
  11. 11. Stir everything until a thick batter forms.
  12. 12. Check the consistency of the batter.
  13. 13. If the batter is too thick, work in a little more buttermilk.
  14. 14. Preheat the waffle iron.
  15. 15. Lightly grease the waffle iron.
  16. 16. Place a ladle of batter into the mold.
  17. 17. Bake the waffles for about 2 to 3 minutes until golden brown.
  18. 18. Let the finished waffles cool on a cake rack.
  19. 19. Wash the lemon thoroughly.
  20. 20. Grate about one teaspoon of zest finely.
  21. 21. Squeeze the juice of the lemon.
  22. 22. Place the mascarpone in a bowl.
  23. 23. Add 50 grams of sugar.
  24. 24. Add one tablespoon of lemon juice.

  33. 33. Wash the berries thoroughly.
  34. 34. Halve the strawberries.
  35. 35. Spread each waffle with about three tablespoons of mascarpone cream.
  36. 36. Place some berries on the cream.
  37. 37. Cover the layer with another waffle.
  38. 38. Repeat the process until all waffles are layered.
  39. 39. Decorate the cake with mint and the remaining berries.
  40. 40. Serve the cake.
