Ingredients
- butter 125 g
- sugar 130 g
- vanilla sugar 1 packet
- salt pinch
- eggs 2 pcs
- wheat flour, type 405 250 g
- baking powder 1 packet
- buttermilk 200 ml
- oil 1 tbsp
- lemons 1 pcs
- mascarpone 250 g
- whipping cream 200 g
- mint, fresh 5 g
- raspberries, fresh 200 g
- blueberries, fresh 200 g
- strawberries 200 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Cut the butter into small cubes and place them in a large mixing bowl.
- 3. Beat the butter with a hand mixer and the whisk attachment until creamy.
- 4. Add 70 grams of sugar, one packet of vanilla sugar, and a pinch of salt.
- 5. Mix the ingredients well together.
- 6. Beat the eggs.
- 7. Add the eggs to the butter mixture little by little.
- 8. Stir continuously while doing so.
- 9. Add the flour and the baking powder.
- 10. Add the buttermilk.
- 11. Stir everything until a thick batter forms.
- 12. Check the consistency of the batter.
- 13. If the batter is too thick, work in a little more buttermilk.
- 14. Preheat the waffle iron.
- 15. Lightly grease the waffle iron.
- 16. Place a ladle of batter into the mold.
- 17. Bake the waffles for about 2 to 3 minutes until golden brown.
- 18. Let the finished waffles cool on a cake rack.
- 19. Wash the lemon thoroughly.
- 20. Grate about one teaspoon of zest finely.
- 21. Squeeze the juice of the lemon.
- 22. Place the mascarpone in a bowl.
- 23. Add 50 grams of sugar.
- 24. Add one tablespoon of lemon juice.
- 25. Add the lemon zest.
- 26. Mix the ingredients well together.
- 27. Place the cream in a tall container.
- 28. Whip the cream until stiff.
- 29. Gently fold the whipped cream into the mascarpone mixture.
- 30. Wash the mint.
- 31. Dry the mint.
- 32. Pluck the leaves from the stems.
- 33. Wash the berries thoroughly.
- 34. Halve the strawberries.
- 35. Spread each waffle with about three tablespoons of mascarpone cream.
- 36. Place some berries on the cream.
- 37. Cover the layer with another waffle.
- 38. Repeat the process until all waffles are layered.
- 39. Decorate the cake with mint and the remaining berries.
- 40. Serve the cake.
