🍰 Waffles with Peach Curd

Ingredients
- butter 75 g
- sugar 150 g
- vanilla sugar 8 g
- salt pinch
- eggs 3 pcs.
- wheat flour, Type 405 200 g
- baking powder 1 tsp
- milk 50 ml
- peaches from can 400 g
- sour cream 200 g
- quark 40 % fat in total 250 g
- sunflower oil 1 tbsp
Instructions
- 1. In a bowl, cream the butter using a hand mixer with a whisk. Gradually add 125 g of sugar, vanilla sugar, and salt while mixing.
- 2. Crack the eggs and gradually mix them into the butter-sugar mixture while stirring continuously. Then fold in the flour, baking powder, and milk until a thick batter forms. If the batter is too thick, add a little more milk.
- 3. Drain the canned peaches in a sieve and let them dry. In a bowl, mix sour cream, curd, and 2 tablespoons of sugar together. Dice the peaches and fold them into the curd mixture.
- 4. Preheat the waffle iron and grease it lightly. Pour a ladle of batter into the mold and bake the waffles for about 2–3 minutes until golden brown. Serve as desired.
