  2. 2. Slice the cucumbers lengthwise into thin strips.

  4. 4. Slice the radishes into thin rounds.
  5. 5. Halve the avocado and remove the pit.
  6. 6. Carefully scoop the avocado flesh out of the skin with a spoon.
  7. 7. Slice the avocado flesh.
  8. 8. Cut the cress from the bed.
  9. 9. Spread goat cream cheese on the whole grain bread slices.
  10. 10. Season the cheese layer with salt and pepper.
  11. 11. Drizzle a little honey over the bread.
  12. 12. Top half of the bread slices with the prepared cucumbers, radishes, avocado, and cress.
  13. 13. Close the sandwiches with the remaining bread slices.
  14. 14. Halve the finished spring sandwiches.
