🍰 Whole Grain Tiramisu

Ingredients
- eggs 4 pcs
- sugar 200 g
- whole wheat flour 100 g
- baking powder 0.5 tsp
- coffee 25 g
- amaretto 100 ml
- quark 40% fat in dry matter 300 g
- whipping cream 200 g
- cocoa powder 3 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Beat 2 eggs and 100 grams of sugar in a bowl for about 5 minutes using a hand mixer until creamy.
- 3. Sift flour and baking powder over the egg mixture.
- 4. Gently fold in the dry ingredients until a uniform batter forms.
- 5. Spread the batter onto a baking sheet lined with baking paper.
- 6. Bake the sponge cake for approx. 15 to 20 minutes in the oven.
- 7. Meanwhile, prepare about 150 milliliters of strong coffee from the coffee powder.
- 8. Let the baked sponge cake cool down completely.
- 9. Cut the cooled sponge cake into strips.
- 10. Place the sponge cake strips into a bowl.
- 11. Soak the sponge cake pieces with the prepared coffee and 50 milliliters of Amaretto or coffee liqueur.
- 12. Separate the remaining eggs by carefully separating the egg whites from the egg yolks.
- 13. Whisk the egg yolks with the remaining sugar in a bowl until creamy.
- 14. Mix quark (a type of fresh cheese) and the remaining liqueur into the egg yolk mixture.
- 15. Whip the cream in a tall container with a hand mixer until stiff peaks form.
- 16. Gently fold the whipped cream into the quark mixture.
- 17. Distribute the soaked sponge cake strips among glasses.
- 18. Pour the cream over the sponge cake pieces.
- 19. Dust everything with cocoa powder.
- 20. Serve the tiramisu immediately or store it in the refrigerator until serving.
