🍽️ Vemondo Double Burger with Cucumber Relish

Ingredients
- soy drink 190 ml
- yeast, fresh 0.5 pcs
- sugar 2.5 tbsp
- wheat flour, Type 405 300 g
- salt pinch
- salad cucumbers 1 pcs
- onions, red 2 pcs
- dill, fresh 10 g
- oil 2 tbsp
- vinegar 4 tbsp
- mustard 5 tsp
- pepper, black ground pinch
- arugula 50 g
- sesame, white 4 tsp
- Vemondo vegan burger patties 8 pcs
- vegan cheese slices 8 slices
- ketchup 4 tsp
Instructions
- 1. Warm up 180 milliliters of soy drink in a pot until it is lukewarm.
- 2. Crumble half a cube of yeast and one teaspoon of sugar into the soy drink.
- 3. Let the mixture rise for about 10 minutes until it has dissolved.
- 4. Add the soy-yeast mixture, flour, and a pinch of salt to a bowl.
- 5. Knead the dough with a hand mixer and dough hooks for about 5 minutes.
- 6. Cover the dough and let it rise for about 1 hour until the volume has doubled.
- 7. Knead the dough lightly one more time.
- 8. Divide the dough into 4 pieces and shape them into buns.
- 9. Place the buns on a baking sheet lined with baking paper.
- 10. Cover the buns and let them rise again for about 30 minutes.
- 11. Peel a cucumber and halve it lengthwise.
- 12. Scrape out the core with a small spoon.
- 13. Cut the cucumber flesh into small cubes.
- 14. Halve an onion, peel it, and dice it finely.
- 15. Wash dill, shake it dry, and chop it finely.
- 16. Heat 2 tablespoons of oil in a pot over medium heat.
- 17. Add the onions and cucumbers to the pot and sweat them for about 5 minutes.
- 18. Add 2 tablespoons of sugar and let it dissolve for about 2 minutes.
- 19. Deglaze the mixture with vinegar.
- 20. Add the dill, 1 teaspoon of mustard, some salt, and a pinch of pepper.
- 21. Let the relish simmer for about 15 minutes.
- 22. Season the cucumber relish to taste.
- 23. Fill the relish into jars with screw-top lids.
- 24. Wash arugula and spin it dry.
- 25. Peel the remaining onion and slice it into rings.
- 26. Preheat the oven to 190 degrees Celsius (top and bottom heat).
- 27. Brush the burger buns with 1 tablespoon of soy drink.
- 28. Sprinkle sesame seeds over the buns.
- 29. Bake the buns in the oven for about 15 to 17 minutes.
- 30. In the meantime, preheat the grill.
- 31. Lightly oil the grill grate.
- 32. Grill the Vemondo patties for about 5 minutes on each side until crispy.
- 33. About 2 minutes before the end of cooking time, place cheese slices on the patties.
- 34. Let the slices melt slightly.
- 35. Brush the bottom halves of the buns with mustard.
- 36. Top the buns with arugula, Vemondo patties, onion rings, and cucumber relish.
- 37. Brush the top halves of the buns with ketchup.
- 38. Place the tops on the burgers.
- 39. Serve the Vemondo Double Burgers.
