🍽️ Vemondo Burger Patties with Apple and Lentil Mix

Ingredients
- lentils, brown 200 g
- salt pinch
- shallots 2 pcs.
- apples, red 1 pc.
- vegetable broth 300 ml
- garlic cloves 1 pc.
- thyme, ground 1 tbsp
- oregano, dried 1 tbsp
- olive oil 6 tbsp
- white wine, sweet 80 ml
- sweet mustard 1 tbsp
- pepper, black ground pinch
- mustard 2 tbsp
- oat drink 50 ml

Instructions
- 1. Place the lentils in a sieve and rinse them under running water. Let the water drain off completely.
- 2. Place the drained lentils in a pot and cover them with about one liter of cold water.
- 3. Bring the water to a boil and cook the lentils on low heat for about 20 minutes until they are tender but still firm.
- 4. Season the lentils with a pinch of salt shortly before the end of the cooking time.
- 5. Drain the cooked lentils and let them drain well.
- 6. Halve the shallots, peel them, and cut them into fine cubes.
- 7. Wash the apple, cut it into eight wedges, and remove the core.
- 8. Slice the apple pieces into thin slices.
- 9. Heat the vegetable broth in another pot.
- 10. Peel the garlic clove and chop it finely.
- 11. Mix the chopped garlic in a bowl with thyme, oregano, and one tablespoon of olive oil.
- 12. Heat two tablespoons of olive oil in a pot over medium heat.
- 13. Sauté the diced shallots for about two minutes until they are translucent.
- 14. Add the apple slices and the drained lentils and sauté everything for another two minutes.
- 15. Deglaze the mixture with white wine and top it up with the heated vegetable broth.
- 16. Stir the sweet mustard into the mixture.
- 17. Let the dish simmer on medium heat for about 15 minutes.
- 18. Season the lentil mixture with salt, pepper, and a bit of mustard.
- 19. Gently fold the oat drink into the lentils.
- 20. Season the Vemondo burger patties on all sides with salt and pepper.
- 21. Heat three tablespoons of olive oil in a frying pan over high heat.
- 22. Fry the burger patties for about four minutes on each side until well-browned.
- 23. Remove the patties from the pan.
- 24. Brush the warm patties with the prepared olive oil and herb mixture.
- 25. Plate the burger patties together with the apple and lentil mixture and serve.
