  1. 1. Place the lentils in a sieve and rinse them under running water. Let the water drain off completely.
  2. 2. Place the drained lentils in a pot and cover them with about one liter of cold water.
  3. 3. Bring the water to a boil and cook the lentils on low heat for about 20 minutes until they are tender but still firm.
  4. 4. Season the lentils with a pinch of salt shortly before the end of the cooking time.
  5. 5. Drain the cooked lentils and let them drain well.
  6. 6. Halve the shallots, peel them, and cut them into fine cubes.
  7. 7. Wash the apple, cut it into eight wedges, and remove the core.
  8. 8. Slice the apple pieces into thin slices.
  9. 9. Heat the vegetable broth in another pot.
  10. 10. Peel the garlic clove and chop it finely.
  11. 11. Mix the chopped garlic in a bowl with thyme, oregano, and one tablespoon of olive oil.
  12. 12. Heat two tablespoons of olive oil in a pot over medium heat.
  13. 13. Sauté the diced shallots for about two minutes until they are translucent.
  14. 14. Add the apple slices and the drained lentils and sauté everything for another two minutes.
  15. 15. Deglaze the mixture with white wine and top it up with the heated vegetable broth.
  16. 16. Stir the sweet mustard into the mixture.
  17. 17. Let the dish simmer on medium heat for about 15 minutes.
  18. 18. Season the lentil mixture with salt, pepper, and a bit of mustard.
  19. 19. Gently fold the oat drink into the lentils.
  20. 20. Season the Vemondo burger patties on all sides with salt and pepper.
  21. 21. Heat three tablespoons of olive oil in a frying pan over high heat.
  22. 22. Fry the burger patties for about four minutes on each side until well-browned.
  23. 23. Remove the patties from the pan.
  24. 24. Brush the warm patties with the prepared olive oil and herb mixture.
  25. 25. Plate the burger patties together with the apple and lentil mixture and serve.
