🍽️ Vegetarian Waffle Sandwich with Mozzarella and Tomato

Ingredients
- basil, fresh 10 g
- tomato paste 2 tbsp
- oil 80 ml
- buttermilk 500 ml
- eggs 2 pcs
- spelt flour, Type 630 260 g
- baking powder 1 tbsp
- salt pinch
- mozzarella 2 pcs
- cherry tomatoes Mix 200 g
- olive oil 1 tbsp
- balsamic vinegar, dark 1 tbsp
- pepper, black ground pinch
Instructions
- 1. Wash the basil thoroughly, pat dry, pluck the leaves from the stems and chop half roughly. In a bowl, mix the tomato paste, oil, buttermilk, the chopped basil and the eggs well. Then add the flour, baking powder and a pinch of salt and stir in gently.
- 2. Preheat the waffle iron and grease lightly. Pour one ladleful of the batter evenly into the mold and bake the waffles for about 2–3 minutes until golden brown.
- 3. Meanwhile, drain the mozzarella and slice it. Wash the cherry tomatoes and halve them. In a bowl, mix the tomatoes with olive oil, balsamic vinegar, salt and pepper.
- 4. Layer the baked waffles alternately with the remaining basil and the mozzarella slices to make small towers. Top with the marinated tomatoes and enjoy. Bon appétit!
