🍽️ Cozy Brussels Sprout and Potato Casserole with Tofu

Ingredients
- Potatoes, mainly firm 750 g
- Salt Pinch
- Onions, yellow 1 pc.
- Brussels sprouts, fresh 750 g
- Smoked tofu 350 g
- Oil 4 tbsp
- Sugar Pinch
- Whipping cream 400 ml
- Pepper, black ground Pinch
- Nutmeg, ground 0.25 tsp
- Cornstarch 1 tbsp
- Sweet paprika 1 tsp
- Appenzeller cheese 100 g
- Chives, fresh 10 g
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Slice the potatoes into thin rounds.
- 3. Fill a pot with water and add some salt.
- 4. Place the potato slices into the boiling salted water.
- 5. Cook the potatoes on medium heat with the lid on for about 10 minutes.
- 6. Drain the potatoes in a sieve afterwards.
- 7. Cut the onions in half and remove the skin.
- 8. Dice the onions finely.
- 9. Wash the Brussels sprouts under running water.
- 10. Trim off the hard stem at the bottom thinly.
- 11. Remove any wilted or unattractive outer leaves.
- 12. Halve the individual Brussels sprouts.
- 13. Cut the smoked tofu into small cubes.
- 14. Heat 2 tablespoons of oil in a pot over high heat.
- 15. Add the onion cubes and sauté them for about 2 minutes until translucent.
- 16. Add the halved Brussels sprouts to the pot.
- 17. Fry the Brussels sprouts for about 8 minutes.
- 18. Deglaze the Brussels sprouts with cream.
- 19. Season the sauce with salt, pepper, and ground nutmeg.
- 20. Mix the tofu in a bowl with 1 tablespoon of cornstarch.
- 21. Add salt, pepper, and 1 teaspoon of paprika powder to the tofu.
- 22. Heat 2 tablespoons of oil in a frying pan over high heat.
- 23. Fry the tofu for about 3 minutes until crispy.
- 24. Place the cooked Brussels sprouts, cream sauce, potatoes, and tofu into a baking dish.
- 25. Mix all ingredients in the dish well together.
- 26. Grate the Appenzeller cheese coarsely over the top.
- 27. Preheat the oven and bake the casserole for about 15 minutes until golden brown.
- 28. Wash the chives and shake them dry.
- 29. Chop the chives finely.
- 30. Take the casserole out of the oven.
- 31. Sprinkle the casserole with the fresh chives.
- 32. Serve the dish immediately and enjoy your meal!
