  1. 1. Wash the potatoes thoroughly.
  2. 2. Slice the potatoes into thin rounds.
  3. 3. Fill a pot with water and add some salt.
  4. 4. Place the potato slices into the boiling salted water.
  5. 5. Cook the potatoes on medium heat with the lid on for about 10 minutes.
  6. 6. Drain the potatoes in a sieve afterwards.
  7. 7. Cut the onions in half and remove the skin.
  8. 8. Dice the onions finely.
  9. 9. Wash the Brussels sprouts under running water.
  10. 10. Trim off the hard stem at the bottom thinly.
  11. 11. Remove any wilted or unattractive outer leaves.
  12. 12. Halve the individual Brussels sprouts.
  13. 13. Cut the smoked tofu into small cubes.
  14. 14. Heat 2 tablespoons of oil in a pot over high heat.
  15. 15. Add the onion cubes and sauté them for about 2 minutes until translucent.
  16. 16. Add the halved Brussels sprouts to the pot.
  17. 17. Fry the Brussels sprouts for about 8 minutes.
  18. 18. Deglaze the Brussels sprouts with cream.
  19. 19. Season the sauce with salt, pepper, and ground nutmeg.
  20. 20. Mix the tofu in a bowl with 1 tablespoon of cornstarch.
  21. 21. Add salt, pepper, and 1 teaspoon of paprika powder to the tofu.
  22. 22. Heat 2 tablespoons of oil in a frying pan over high heat.
  23. 23. Fry the tofu for about 3 minutes until crispy.
  24. 24. Place the cooked Brussels sprouts, cream sauce, potatoes, and tofu into a baking dish.
  25. 25. Mix all ingredients in the dish well together.
  26. 26. Grate the Appenzeller cheese coarsely over the top.
  27. 27. Preheat the oven and bake the casserole for about 15 minutes until golden brown.
  28. 28. Wash the chives and shake them dry.
  29. 29. Chop the chives finely.
  30. 30. Take the casserole out of the oven.
  31. 31. Sprinkle the casserole with the fresh chives.
  32. 32. Serve the dish immediately and enjoy your meal!
