🍲 Cozy Red Cabbage Soup with Mushrooms and Orange

Ingredients
- red cabbage, fresh 600 g
- onions, red 1 pc.
- potatoes, floury 200 g
- oil 3 tbsp
- orange juice 200 ml
- vegetable broth 800 ml
- salt pinch
- chives, fresh 10 g
- mushrooms, white 200 g
- pepper, black ground pinch
- sugar pinch
- crème fraîche 4 tsp
Instructions
- 1. Wash the red cabbage and cut it into four large quarters. Remove the tough outer leaves and the hard core in the center. Cut the cabbage into coarse pieces. Peel the onion and cut it in half. Peel the potatoes, wash them thoroughly, and cut them into coarse cubes.
- 2. Place the red cabbage pieces, onion halves, and potato cubes into the mixing container of your appliance. Chop the ingredients for 6 seconds on speed 6. Add 2 tablespoons of oil and sauté the mixture for 4 minutes on the sauté setting. Pour in orange juice and hot vegetable broth. Season with salt and let the soup cook for 25 minutes on speed 1 at 100 degrees Celsius.
- 3. While the soup is cooking, wash the chives and shake them dry. Cut them into fine rings. Clean the mushrooms if necessary with a kitchen towel and cut them into quarters or eighths depending on their size. Heat 1 tablespoon of oil in a frying pan over high heat. Fry the mushrooms for about 4 to 5 minutes. Season them with salt and pepper afterwards.
- 4. Blend the finished soup for 1 minute on speed 8 until it is creamy. Taste and adjust the seasoning with salt and sugar. Divide the soup onto plates. Garnish with a dollop of crème fraîche, fresh chives, and the fried mushrooms. Serve with a slice of orange as decoration. Enjoy your meal!
