🍽️ Vegetable Quesadillas with Fresh Avocado Dip

Ingredients
- Lime 1 pc.
- Avocado 2 pc.
- Salt pinch
- Pepper, black ground pinch
- Spring onions 0.5 bunch
- Pepper, yellow 2 pc.
- Carrots 2 pc.
- Cilantro, fresh 10 g
- Gouda, grated 150 g
- Wraps, whole grain 8 pc.
Instructions
- 1. Squeeze the juice from the half lime into a small bowl.
- 2. Cut the avocado in half and remove the pit.
- 3. Carefully scoop the avocado flesh out of the skin with a spoon.
- 4. Place the avocado in a separate bowl and add two tablespoons of lime juice.
- 5. Mash the avocado roughly with a fork.
- 6. Season the avocado mixture with salt and pepper to taste.
- 7. Keep the guacamole cool until you are ready to serve it.
- 8. Wash the spring onions and pat them dry thoroughly.
- 9. Trim off the tough ends of the spring onions.
- 10. Slice the spring onions into thin rings.
- 11. Wash the bell pepper and cut it in half lengthwise.
- 12. Remove the green stem and seeds from the bell pepper.
- 13. Dice the bell pepper flesh into small cubes.
- 14. Peel the carrots and trim off the ends.
- 15. Grate the carrots coarsely.
- 16. Wash the coriander (cilantro) and dry the leaves.
- 17. Chop the coriander finely.
- 18. Place the chopped vegetables and coriander into a large bowl.
- 19. Mix the vegetables with the grated Gouda cheese.
- 20. Heat a non-stick pan without oil over medium heat.
- 21. Place one tortilla wrap into the hot pan.
- 22. Spread about four tablespoons of the vegetable-cheese mixture over half of the wrap.
- 23. Fold the empty half of the wrap over the filling.
- 24. Fry the quesadilla for about two minutes until the cheese melts.
- 25. Carefully flip the quesadilla using a spatula.
- 26. Fry the other side for another two minutes until golden brown.
- 27. Remove the finished quesadilla from the pan and place it on a plate.
- 28. Repeat the process until all wraps are filled and fried.
- 29. Let the quesadillas cool down briefly so the cheese sets slightly.
- 30. Cut the quesadillas into triangular pieces.
- 31. Serve the quesadillas together with the prepared guacamole.
