  1. 1. Clean the mushrooms carefully with a kitchen towel and dice them finely.
  2. 2. Peel the onion, halve it, and cut it into fine dice.
  3. 3. Peel the garlic clove and chop it finely.
  4. 4. Wash the parsley, shake it dry, and pick the leaves off the stems.
  5. 5. Chop the parsley leaves coarsely.
  6. 6. Heat one tablespoon of oil in a frying pan over high heat.
  7. 7. Fry the diced mushrooms for about five minutes.
  8. 8. Add the onions and garlic and fry for another four minutes.
  9. 9. Let the mushroom mixture cool down briefly.
  10. 10. Place the cooled mushrooms into a bowl.
  11. 11. Season the mixture with salt, pepper, and grated nutmeg.
  12. 12. Stir in one teaspoon of mustard.
  13. 13. Add one tablespoon of cornstarch.
  14. 14. Mix five tablespoons of grated Parmesan into the mixture.
  15. 15. Add five tablespoons of breadcrumbs.
  16. 16. Add one egg to the mixture.
  17. 17. Fold in the chopped parsley.
  18. 18. Mix all ingredients thoroughly together.
  19. 19. Shape the mixture into patties about five centimeters in size.
  20. 20. Press the patties firmly but gently between your hands.
  21. 21. Wash the corn salad thoroughly.
  22. 22. Let the corn salad drain in a sieve.
  23. 23. Wash the bell pepper.
  24. 24. Halve the bell pepper and remove the core and seeds.
  25. 25. Cut the bell pepper into very thin strips.
  26. 26. Whisk one teaspoon of mustard with three tablespoons of oil in a small bowl.
  27. 27. Add two tablespoons of vinegar to the dressing mixture.
  28. 28. Season the dressing with salt, pepper, and a pinch of sugar.
  29. 29. Toss the corn salad and pepper strips with the dressing.
  30. 30. Wipe the frying pan clean.
  31. 31. Heat two tablespoons of oil in the pan.
  32. 32. Fry the patties on all sides for about five minutes.
  33. 33. Serve the warm patties on plates.
  34. 34. Add the fresh corn salad as a side dish.
