🍽️ Vegetarian Mushroom Patties with Corn Salad

Ingredients
- mushrooms, brown 750 g
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- parsley, fresh 15 g
- oil 6 tbsp
- salt pinch
- pepper, black ground pinch
- nutmeg, ground 0.25 tsp
- mustard 2 tsp
- cornstarch 1 tbsp
- parmesan, grated 5 tbsp
- breadcrumbs 5 tbsp
- eggs 1 pc.
- corn salad 150 g
- bell pepper, red 1 pc.
- vinegar 2 tbsp
- sugar pinch
Instructions
- 1. Clean the mushrooms carefully with a kitchen towel and dice them finely.
- 2. Peel the onion, halve it, and cut it into fine dice.
- 3. Peel the garlic clove and chop it finely.
- 4. Wash the parsley, shake it dry, and pick the leaves off the stems.
- 5. Chop the parsley leaves coarsely.
- 6. Heat one tablespoon of oil in a frying pan over high heat.
- 7. Fry the diced mushrooms for about five minutes.
- 8. Add the onions and garlic and fry for another four minutes.
- 9. Let the mushroom mixture cool down briefly.
- 10. Place the cooled mushrooms into a bowl.
- 11. Season the mixture with salt, pepper, and grated nutmeg.
- 12. Stir in one teaspoon of mustard.
- 13. Add one tablespoon of cornstarch.
- 14. Mix five tablespoons of grated Parmesan into the mixture.
- 15. Add five tablespoons of breadcrumbs.
- 16. Add one egg to the mixture.
- 17. Fold in the chopped parsley.
- 18. Mix all ingredients thoroughly together.
- 19. Shape the mixture into patties about five centimeters in size.
- 20. Press the patties firmly but gently between your hands.
- 21. Wash the corn salad thoroughly.
- 22. Let the corn salad drain in a sieve.
- 23. Wash the bell pepper.
- 24. Halve the bell pepper and remove the core and seeds.
- 25. Cut the bell pepper into very thin strips.
- 26. Whisk one teaspoon of mustard with three tablespoons of oil in a small bowl.
- 27. Add two tablespoons of vinegar to the dressing mixture.
- 28. Season the dressing with salt, pepper, and a pinch of sugar.
- 29. Toss the corn salad and pepper strips with the dressing.
- 30. Wipe the frying pan clean.
- 31. Heat two tablespoons of oil in the pan.
- 32. Fry the patties on all sides for about five minutes.
- 33. Serve the warm patties on plates.
- 34. Add the fresh corn salad as a side dish.
