🥗 Vegetarian Çiğ-Köfte in Wraps with Yogurt, Salad, and Tomatoes

Ingredients
- Salt pinch
- Spring onions 1 bunch
- Parsley, fresh 25 g
- Mint, fresh 15 g
- Mini Roman lettuce 2 pcs.
- Vine tomatoes 3 pcs.
- Oil 2 tbsp
- Bulgur 150 g
- Tomato paste 150 g
- Sugar 1 tsp
- Pepper, red 1 pc.
- Dürüm wraps 4 pcs.
- Yogurt, plain 150 g
Instructions
- 1. Bring about 250 milliliters of salted water to a boil in a pot.
- 2. Wash the spring onions and slice them into thin rings.
- 3. Wash the parsley and mint, pat them dry, and chop the leaves finely.
- 4. Wash the lettuce, shake it dry, and cut it into thin strips.
- 5. Wash the tomatoes and cut them into coarse cubes.
- 6. Wash the bell pepper, remove the stem and seeds, and chop it into rough pieces.
- 7. Heat the oil in a pan over medium heat.
- 8. Sauté the bulgur, the white part of the spring onions, tomato paste, sugar, and bell pepper for about 3 minutes.
- 9. Deglaze the pan with the hot salted water and stir well.
- 10. Let the mixture sit covered for about 15 minutes to swell.
- 11. Fluff the bulgur and transfer it to a bowl.
- 12. Add the green part of the spring onions, parsley, and mint.
- 13. Season the mixture with salt and pepper and mix thoroughly.
- 14. Wet your hands and shape the bulgur mixture into elongated patties.
- 15. If necessary, add water by the tablespoon until the mixture is easy to shape.
- 16. Arrange the Çiğ-Köfte on a plate.
- 17. Serve the wraps, tomatoes, salad, and yogurt alongside.
