  2. 2. Place the potatoes in a pot.
  3. 3. Cover them with salted water.
  4. 4. Bring the water to a boil.
  5. 5. Simmer the potatoes over medium heat for about 20 minutes.
  6. 6. In the meantime, cube the smoked tofu.
  7. 7. Peel the celery.
  8. 8. Dice the celery finely.
  9. 9. Peel the carrots.
  10. 10. Remove the ends of the carrots.
  11. 11. Dice the carrots finely.
  12. 12. Halve the leek lengthwise.
  13. 13. Remove the root end from the leek.
  14. 14. Cut the leek into thin strips.
  15. 15. Wash the leek strips in a sieve.
  16. 16. Halve the onions.
  17. 17. Peel the onions.
  18. 18. Cut the onions into thin strips.
  19. 19. Cut the dried tomatoes into strips.
  20. 20. Wash the chives.
  21. 21. Shake the chives dry.
  22. 22. Cut the chives into thin rings.
  23. 23. Drain the cooked potatoes.
  24. 24. Shock the potatoes with cold water.
  25. 25. Let the potatoes drain.
  26. 26. Let the potatoes cool down a bit.
  27. 27. Peel the cooled potatoes.
  28. 28. Slice the potatoes into about 0.5 cm thick slices.
  29. 29. Heat 6 tablespoons of oil in a pan over medium heat.
  30. 30. Fry the smoked tofu in it for about 5 minutes until crispy.

  39. 39. Add the fried smoked tofu back to the pan.

  41. 41. Add cumin and marjoram.
  42. 42. Deglaze the dish with balsamic vinegar.
  43. 43. Season to taste with salt and pepper.
  44. 44. Serve the gröstl on plates.
  45. 45. Garnish the dish with the chive rings.
