🍽️ Vegan Tyrolean Gröstl with Smoked Tofu and Marjoram

Ingredients
- potatoes, waxy 1 kg
- salt pinch
- smoked tofu 350 g
- celeriac 0.5 pc.
- carrots 2 pc.
- leek 1 pc.
- onions, yellow 1 pc.
- tomatoes, dried 40 g
- chives, fresh 10 g
- oil 6 tbsp
- cumin, whole 1 tsp
- marjoram, dried 2 tsp
- balsamic vinegar, dark 1 tbsp
- pepper, black ground pinch
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place the potatoes in a pot.
- 3. Cover them with salted water.
- 4. Bring the water to a boil.
- 5. Simmer the potatoes over medium heat for about 20 minutes.
- 6. In the meantime, cube the smoked tofu.
- 7. Peel the celery.
- 8. Dice the celery finely.
- 9. Peel the carrots.
- 10. Remove the ends of the carrots.
- 11. Dice the carrots finely.
- 12. Halve the leek lengthwise.
- 13. Remove the root end from the leek.
- 14. Cut the leek into thin strips.
- 15. Wash the leek strips in a sieve.
- 16. Halve the onions.
- 17. Peel the onions.
- 18. Cut the onions into thin strips.
- 19. Cut the dried tomatoes into strips.
- 20. Wash the chives.
- 21. Shake the chives dry.
- 22. Cut the chives into thin rings.
- 23. Drain the cooked potatoes.
- 24. Shock the potatoes with cold water.
- 25. Let the potatoes drain.
- 26. Let the potatoes cool down a bit.
- 27. Peel the cooled potatoes.
- 28. Slice the potatoes into about 0.5 cm thick slices.
- 29. Heat 6 tablespoons of oil in a pan over medium heat.
- 30. Fry the smoked tofu in it for about 5 minutes until crispy.
- 31. Remove the smoked tofu from the pan.
- 32. Let the smoked tofu drain.
- 33. Leave the oil in the pan.
- 34. Add the potato slices to the pan.
- 35. Fry the potatoes over medium heat for about 15 minutes until golden brown and crispy.
- 36. Turn the potatoes once carefully during this process.
- 37. Add the celery, carrots, leek, onions, and dried tomatoes.
- 38. Fry the vegetables for about 3 minutes.
- 39. Add the fried smoked tofu back to the pan.
- 40. Heat everything together briefly.
- 41. Add cumin and marjoram.
- 42. Deglaze the dish with balsamic vinegar.
- 43. Season to taste with salt and pepper.
- 44. Serve the gröstl on plates.
- 45. Garnish the dish with the chive rings.
