🍳 Vegan Summer Muesli with Berries

Ingredients
- Bananas 2 pcs
- Walnut kernels 30 g
- Almonds, whole 30 g
- Oat flakes, hearty 140 g
- Maple syrup 1 tbsp
- Coconut oil 1 tbsp
- Strawberries 150 g
- Blueberries, fresh 100 g
- Raspberries, fresh 100 g
- Mint, fresh 15 g
- Soy yogurt vanilla 1000 g
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Peel the bananas and mash them into a puree in a bowl using a fork.
- 3. Finely chop the walnuts and almonds.
- 4. Add the chopped nuts, oat flakes, maple syrup, and coconut oil to the banana puree.
- 5. Mix all ingredients thoroughly together.
- 6. Line a baking tray with baking paper.
- 7. Spread the granola mixture evenly on the tray.
- 8. Bake the mixture in the oven for about 15 minutes.
- 9. Remove the tray from the oven and turn the mixture over.
- 10. Crumble the mixture with a fork.
- 11. Bake the granola for another 15 minutes until crispy.
- 12. Wash the strawberries and remove the green stems.
- 13. Slice the strawberries.
- 14. Wash the blueberries and raspberries.
- 15. Wash the mint and shake it dry.
- 16. Pluck the mint leaves from the stems.
- 17. Remove the granola from the oven.
- 18. Let the granola cool down for about 15 minutes.
- 19. Distribute the vanilla soy yogurt onto several bowls.
- 20. Add the cooled granola and berries on top of the yogurt.
- 21. Garnish the muesli with the mint leaves.
- 22. Serve the breakfast immediately.
