  1. 1. Wash the potatoes thoroughly under running water.
  2. 2. Peel the potatoes and cut them into large chunks.
  3. 3. Place the potato chunks in a pot with salted water.
  4. 4. Bring the water to a boil.
  5. 5. Cook the potatoes over medium heat for about 20 minutes until they are soft.
  6. 6. Drain the cooking water and let the potatoes drip dry in a colander.
  7. 7. Wash the parsley, chives, and dill thoroughly.
  8. 8. Shake the herbs dry.
  9. 9. Pluck the leaves off the stems.
  10. 10. Chop the herbs coarsely.
  11. 11. Set aside two tablespoons of the chopped herbs for garnish.
  12. 12. Place soy yogurt, one tablespoon of oil, vinegar, and the remaining chopped herbs into a tall container.
  13. 13. Blend the mixture into a smooth sauce.
  14. 14. Season the sauce to taste with salt, pepper, and sugar.
  15. 15. Heat three tablespoons of oil in a frying pan over medium heat.
  16. 16. Fry the vegan schnitzels for about eight minutes until golden brown on all sides.
  17. 17. Let the fried schnitzels drip dry on kitchen paper.
  18. 18. Cut a lemon into wedges.
  19. 19. Mix the boiled potatoes with the remaining chopped herbs.
  20. 20. Plate the boiled potatoes, vegan schnitzels, and green sauce.
  21. 21. Garnish the dishes with the lemon wedges.
