🍽️ Vegan Schnitzel with Green Sauce

Ingredients
- potatoes, mainly waxy 1 kg
- salt 1 g
- parsley, fresh 40 g
- chives, fresh 20 g
- dill, fresh 20 g
- soy yogurt 300 g
- oil 4 tbsp
- vinegar 1 tbsp
- pepper, black ground pinch
- sugar pinch
- vegan schnitzel, breaded 8 pcs
- lemons 1 pc
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Peel the potatoes and cut them into large chunks.
- 3. Place the potato chunks in a pot with salted water.
- 4. Bring the water to a boil.
- 5. Cook the potatoes over medium heat for about 20 minutes until they are soft.
- 6. Drain the cooking water and let the potatoes drip dry in a colander.
- 7. Wash the parsley, chives, and dill thoroughly.
- 8. Shake the herbs dry.
- 9. Pluck the leaves off the stems.
- 10. Chop the herbs coarsely.
- 11. Set aside two tablespoons of the chopped herbs for garnish.
- 12. Place soy yogurt, one tablespoon of oil, vinegar, and the remaining chopped herbs into a tall container.
- 13. Blend the mixture into a smooth sauce.
- 14. Season the sauce to taste with salt, pepper, and sugar.
- 15. Heat three tablespoons of oil in a frying pan over medium heat.
- 16. Fry the vegan schnitzels for about eight minutes until golden brown on all sides.
- 17. Let the fried schnitzels drip dry on kitchen paper.
- 18. Cut a lemon into wedges.
- 19. Mix the boiled potatoes with the remaining chopped herbs.
- 20. Plate the boiled potatoes, vegan schnitzels, and green sauce.
- 21. Garnish the dishes with the lemon wedges.
- 22. Serve the meal and enjoy!
