🍽️ Vegan Hawaii Schnitzel with Crispy Fried Potatoes

Ingredients
- potatoes, mainly firm 750 g
- salt pinch
- onions, yellow 1 pc.
- oil 7 tbsp
- parsley, fresh 10 g
- pepper, black ground pinch
- Vemondo vegan mini schnitzels Classic 8 pcs.
- pineapple slices from can 290 g
- smoked tofu 200 g
- vegan cheese slices 8 slices
- lingonberries 8 tbsp
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place them in a pot and cover them just with salted water.
- 3. Bring the water to a boil.
- 4. Simmer the potatoes on medium heat for about 20 minutes.
- 5. Drain the water.
- 6. Rinse the potatoes briefly with cold water to cool them down.
- 7. Let them drain completely and cool down.
- 8. Peel the cooled potatoes.
- 9. Slice them into rounds about 0.5 centimeters thick.
- 10. Halve the onion and remove the outer skin.
- 11. Dice the onion finely.
- 12. Heat 4 tablespoons of oil in a pan on low to medium heat.
- 13. Fry the potato slices on medium heat for about 15 minutes until golden brown and crispy.
- 14. Turn the potatoes once carefully during cooking.
- 15. Add the diced onion in the last 1 to 2 minutes.
- 16. Sauté the onion until translucent.
- 17. Wash the parsley and shake it dry.
- 18. Remove the coarse stems.
- 19. Chop the parsley roughly.
- 20. Season the fried potatoes with salt and pepper.
- 21. Sprinkle them with the chopped parsley.
- 22. Preheat the oven to 170 degrees Celsius with top and bottom heat.
- 23. Heat 3 tablespoons of oil in a separate pan on medium heat.
- 24. Fry the vegan mini schnitzels for about 8 minutes until golden brown on all sides.
- 25. Place the fried schnitzels on kitchen paper to absorb excess fat.
- 26. Let the pineapple slices drain in a sieve.
- 27. Slice the smoked tofu into thin slices.
- 28. Top the vegan mini schnitzels with smoked tofu, pineapple, and vegan cheese slices.
- 29. Place the topped schnitzels on a baking sheet lined with baking paper.
- 30. Bake the Hawaii schnitzels in the oven for about 10 minutes.
- 31. Distribute the finished vegan mini schnitzels onto plates.
- 32. Garnish them with lingonberries.
- 33. Serve the schnitzels together with the fried potatoes.
