  1. 1. Peel the carrots and cut off the ends.
  2. 2. Wash the zucchini and cut off the ends as well.
  3. 3. Grate the zucchini and carrots coarsely.
  4. 4. Halve the onions, peel them, and dice them finely.
  5. 5. Wash the parsley, shake it dry, and pick off the leaves.
  6. 6. Finely chop the parsley leaves.
  7. 7. Place the grated vegetables, onions, and parsley into a bowl.
  8. 8. Add paprika powder, thyme, and 3 tablespoons of oat flakes.
  9. 9. Knead the ingredients thoroughly together.
  10. 10. If the mixture is too wet, knead in 2 tablespoons of flour.
  11. 11. Season the patty mixture generously with salt and pepper.
  12. 12. Moisten your hands with a little water.
  13. 13. Shape about 8 round patties from the mixture.
  14. 14. Heat oil in a frying pan over medium heat.
  15. 15. Fry the vegetable patties for approx. 3–4 minutes on each side until crispy.
  16. 16. Serve the patties immediately while hot.
