🍽️ Crispy Vegan Vegetable Patties

Ingredients
- Carrots 2 pcs.
- Zucchini 1 pcs.
- Onions, yellow 1 pcs.
- Parsley, fresh 10 g
- Pepper, sweet 1 tsp
- Thyme, ground 0.5 tsp
- Oats, fine 3 tbsp
- Wheat flour, Type 405 2 tbsp
- Salt pinch
- Pepper, black ground pinch
- Oil 3 tbsp
Instructions
- 1. Peel the carrots and cut off the ends.
- 2. Wash the zucchini and cut off the ends as well.
- 3. Grate the zucchini and carrots coarsely.
- 4. Halve the onions, peel them, and dice them finely.
- 5. Wash the parsley, shake it dry, and pick off the leaves.
- 6. Finely chop the parsley leaves.
- 7. Place the grated vegetables, onions, and parsley into a bowl.
- 8. Add paprika powder, thyme, and 3 tablespoons of oat flakes.
- 9. Knead the ingredients thoroughly together.
- 10. If the mixture is too wet, knead in 2 tablespoons of flour.
- 11. Season the patty mixture generously with salt and pepper.
- 12. Moisten your hands with a little water.
- 13. Shape about 8 round patties from the mixture.
- 14. Heat oil in a frying pan over medium heat.
- 15. Fry the vegetable patties for approx. 3–4 minutes on each side until crispy.
- 16. Serve the patties immediately while hot.
