  1. 1. Mix flour, water, yeast, oil, one tablespoon of sugar, and one tablespoon of salt in a bowl to form a smooth dough.
  2. 2. Let the dough rest covered for about 15 minutes.
  3. 3. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  4. 4. Halve the onions, peel them, and slice them into thin strips.
  5. 5. Place the smoked tofu in a colander, let it drain, and cut it into small cubes.
  6. 6. Mix soy yogurt, mustard, light balsamic vinegar, and a little sugar in a bowl.
  7. 7. Season the sauce mixture with salt and pepper to taste.
  8. 8. Flour your work surface and roll the dough into four equal baguette shapes.
  9. 9. Place the dough shapes on a baking sheet lined with baking paper and press them down slightly.
  10. 10. Spread the prepared sauce mixture over the dough shapes.
  11. 11. Distribute the sliced onions and tofu evenly over the top.
  12. 12. Sprinkle a little more pepper over the top.
  13. 13. Bake the ciabattas in the oven for about 15 minutes until golden brown.
  14. 14. Let the flammkuchen ciabattas cool down slightly and serve them on plates.
