Ingredients
- Vegan herb spread 50 g
- Vegan salad mayonnaise 40 ml
- Mustard 10 g
- Salt Pinch
- Pepper, black ground Pinch
- Oil 2 Tbsp
- Smoked tofu 200 g
- Roma tomatoes 2 pcs
- Mini cucumbers 4 pcs
- Iceberg lettuce 0.5 pcs
- Rye bread 8 slices
Instructions
- 1. Mix vegan spread, vegan mayonnaise, and mustard in a bowl.
- 2. Season the mixture with salt and pepper to taste.
- 3. Set the sauce aside to let the flavors meld.
- 4. Heat oil in a frying pan over high heat.
- 5. Fry the smoked tofu slices for about 4–5 minutes until crispy and golden brown on all sides.
- 6. Drain the tofu on kitchen paper.
- 7. Let the tofu cool down briefly.
- 8. Wash the tomato and remove the core.
- 9. Slice the tomato.
- 10. Wash the cucumber and remove the ends.
- 11. Peel the cucumber.
- 12. Slice the cucumber lengthwise into thin slices.
- 13. Halve the iceberg lettuce.
- 14. Cut the iceberg lettuce into very thin strips.
- 15. Wash the cut lettuce strips.
- 16. Spin the lettuce dry.
- 17. Add the iceberg lettuce to the mayonnaise-mustard mixture in the bowl.
- 18. Mix the lettuce with the sauce thoroughly.
- 19. Season the salad mixture with salt and pepper if necessary.
- 20. Cut two slices of rye bread of approximately equal thickness.
- 21. Spread the lettuce-mayonnaise mixture onto both bread slices.
- 22. Top one of the bread slices with smoked tofu.
- 23. Place the tomato slices on the tofu.
- 24. Place the cucumber slices on the tomato.
- 25. Cover the sandwich with the second bread slice.
- 26. Serve the vegan club sandwich.
