🍰 Vegan Baked Apple Cream with Speculoos Crust in a Glass

Ingredients
- Lemon 0.5 pc.
- Soy yogurt 250 g
- Vegan spread classic 150 g
- Powdered sugar 4 tbsp
- Apples, red 2 pc.
- Margarine, vegan 1 tbsp
- Cinnamon 1 tsp
- Water 50 ml
- Speculaas 4 pc.
Instructions
- 1. Squeeze the juice from half of the lemon.
- 2. Add the soy yogurt, vegan spread, lemon juice, and 3 tablespoons of powdered sugar to a bowl.
- 3. Whisk the mixture until it is smooth and lump-free.
- 4. Place the bowl in the refrigerator for at least 20 minutes to let the cream cool down.
- 5. Peel the apples and cut them in half lengthwise.
- 6. Remove the core from the apple halves.
- 7. Cut the apple flesh into cubes of about 1 to 2 centimeters.
- 8. Melt the margarine in a pan over medium heat.
- 9. Add the apple cubes to the pan and fry them for about 5 minutes.
- 10. Add the remaining powdered sugar, cinnamon, and a little water.
- 11. Simmer the apple pieces over low heat until the liquid has completely evaporated.
- 12. Crumble the speculoos cookies into small pieces using your hands.
- 13. Fill the glasses first with the chilled cream.
- 14. Distribute the cooked apple pieces evenly over the cream.
- 15. Finally, top the dessert with the speculoos crumbs.
