  2. 2. Add the soy yogurt, vegan spread, lemon juice, and 3 tablespoons of powdered sugar to a bowl.
  3. 3. Whisk the mixture until it is smooth and lump-free.
  4. 4. Place the bowl in the refrigerator for at least 20 minutes to let the cream cool down.
  5. 5. Peel the apples and cut them in half lengthwise.
  6. 6. Remove the core from the apple halves.
  7. 7. Cut the apple flesh into cubes of about 1 to 2 centimeters.
  8. 8. Melt the margarine in a pan over medium heat.
  9. 9. Add the apple cubes to the pan and fry them for about 5 minutes.
  10. 10. Add the remaining powdered sugar, cinnamon, and a little water.
  11. 11. Simmer the apple pieces over low heat until the liquid has completely evaporated.
  12. 12. Crumble the speculoos cookies into small pieces using your hands.
  13. 13. Fill the glasses first with the chilled cream.
  14. 14. Distribute the cooked apple pieces evenly over the cream.
  15. 15. Finally, top the dessert with the speculoos crumbs.
