🍽️ Vegan Onion Pie

Ingredients
- yeast, fresh 0.5 pcs
- sugar 1 tsp
- water 200 ml
- wheat flour, Type 405 500 g
- salt pinch
- oil 9 tbsp
- onions, yellow 800 g
- pepper, black ground pinch
- cumin 0.25 tsp
- onions, red 1 pcs
- thyme, fresh 10 g
- soy yogurt 200 g
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Dissolve the sugar in lukewarm water and add the yeast.
- 3. Let the mixture rest covered for about 10 minutes.
- 4. Add flour, salt, and 6 tablespoons of oil.
- 5. Knead everything into a smooth dough.
- 6. Let the dough rise covered in a warm place for about 1 hour.
- 7. Halve the yellow onions and peel them.
- 8. Slice the onions into strips.
- 9. Heat 3 tablespoons of oil in a pan over medium heat.
- 10. Sauté the onion strips in it.
- 11. Season the onions with salt, pepper, and caraway.
- 12. Preheat the oven to 200 °C top/bottom heat.
- 13. Knead the risen dough again.
- 14. Roll out the dough on a floured surface.
- 15. Ensure the dough fits the size of the baking tray.
- 16. Place the dough on a deep baking tray lined with parchment paper.
- 17. Use a fork to create a small border on the dough.
- 18. Peel the red onion.
- 19. Slice the red onion into rings.
- 20. Wash the thyme and shake it dry.
- 21. Strip the thyme leaves from the stems.
- 22. Mix soy yogurt, thyme, and the prepared onions in a bowl.
- 23. Spread the onion mixture onto the yeast dough.
- 24. Top the pie with the red onion rings.
- 25. Bake the pie in the preheated oven for about 35 minutes.
