🍰 Vegan Lemon Cake

Ingredients
- oil for greasing 1 tbsp
- lemons 1 pc.
- spreadable fat 100 g
- sugar 200 g
- soy drink 250 ml
- wheat flour, type 405 300 g
- baking powder 2 tsp
- powdered sugar 300 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Grease a loaf pan well with fat.
- 3. Wash the lemon thoroughly.
- 4. Grate about one teaspoon of the zest finely.
- 5. Cut the lemon in half and squeeze out the juice.
- 6. Take a bowl and briefly mix spreadable fat, sugar, and two tablespoons of lemon juice.
- 7. Pour the soy drink into the bowl and mix it with the mixture.
- 8. Add flour, baking powder, and the lemon zest to the bowl.
- 9. Stir everything well until a uniform batter forms.
- 10. Pour the batter into the prepared loaf pan.
- 11. Bake the cake in the oven for about 45 minutes.
- 12. Carefully remove the cake from the oven.
- 13. Let the cake cool down completely.
- 14. Take a clean bowl for the glaze.
- 15. Mix two tablespoons of lemon juice with powdered sugar.
- 16. Stir until a thick glaze forms.
- 17. Spread the glaze evenly over the cooled cake.
- 18. Let the glaze set.
- 19. Serve the cake and enjoy it.
