🍰 Vegan Cinnamon Baked Apples with Creamy Vanilla Sauce

Ingredients
- almonds, whole 50 g
- margarine, vegan 3 tbsp
- sugar 3 tbsp
- raisins 50 g
- applesauce 2 tbsp
- brown rum 10 ml
- marzipan base 100 g
- cinnamon pinch
- salt pinch
- apples, red 2 pcs
- vanilla pod 1 pc
- almond drink 400 ml
- cornstarch 2 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Roughly chop the almonds.
- 3. Place the soft almonds, margarine, one tablespoon of sugar, raisins, apple puree, rum, marzipan base, cinnamon, and a pinch of salt into a bowl.
- 4. Knead the ingredients together by hand to form a filling.
- 5. Wash the apples thoroughly.
- 6. Cut the apples in half.
- 7. Remove the core from the apple halves generously.
- 8. Place the apple halves cut-side up in a baking dish.
- 9. Fill each apple half with two to three tablespoons of the marzipan mixture.
- 10. Put the dish in the oven and bake the apples for about 40 to 50 minutes.
- 11. Cover the apples with aluminum foil after 30 minutes if the raisins are browning too much.
- 12. Slice the vanilla pod lengthwise.
- 13. Scrape the vanilla seeds out of the pod using the tip of a knife.
- 14. Add almond milk, two tablespoons of sugar, the vanilla seeds, and the empty pod to a saucepan.
- 15. Bring the mixture to a boil.
- 16. Let the sauce steep on medium heat for about 10 minutes.
- 17. Mix cornstarch with a little cold water in a small bowl.
- 18. Remove the vanilla pod from the saucepan.
- 19. Bring the liquid back to a boil.
- 20. Stir in the cornstarch and water mixture.
- 21. Simmer the sauce for about 2 minutes until it becomes slightly creamy.
- 22. Carefully remove the baked apples from the oven.
- 23. Plate the apples.
- 24. Pour the vanilla sauce around the apples.
- 25. Serve the dish immediately.
