🍰 Vegan Vanilla Cake

Ingredients
- Wheat flour, Type 405 300 g
- Sugar 150 g
- Vanilla sugar 1 packet
- Baking powder 0.5 packet
- Salt 0.25 tsp
- margarine, vegan 280 g
- Lemons 1 pc
- Soy yogurt vanilla 1 kg
- Vanilla pudding powder 2 packets
Instructions
- 1. Preheat the oven to 170 degrees Celsius using the top and bottom heat setting.
- 2. Line the bottom of a springform pan with baking paper.
- 3. Add 300 grams of flour, 150 grams of sugar, one packet of vanilla sugar, half a packet of baking powder, and a quarter teaspoon of salt to a large bowl.
- 4. Mix the dry ingredients well together.
- 5. Add 180 grams of margarine.
- 6. Knead the margarine into the mixture with your hands until a smooth dough forms.
- 7. Press the dough thinly into the prepared pan.
- 8. Shape a border about 3 centimeters high from the dough.
- 9. Wash a lemon thoroughly with hot water.
- 10. Grate about one teaspoon of the lemon zest.
- 11. Squeeze the lemon to extract the juice.
- 12. Melt 100 grams of margarine in a small saucepan.
- 13. Add vanilla-flavored soy yogurt to a separate bowl.
- 14. Add the grated lemon zest.
- 15. Add 30 milliliters of lemon juice.
- 16. Add the melted margarine.
- 17. Whisk all the filling ingredients together well.
- 18. Add vanilla pudding powder.
- 19. Whisk the mixture again until the pudding powder is dissolved.
- 20. Pour the filling into the cake pan onto the dough base.
- 21. Bake the cake for about 70 minutes.
- 22. Turn off the oven after the baking time.
- 23. Let the cake cool down in the turned-off oven.
- 24. Remove the cake from the oven and serve it.
