🍰 Vegan Lemon Dough Flats with Powdered Sugar

Ingredients
- Soy drink 120 ml
- Yeast, fresh 0.5 pcs
- Sugar 40 g
- Organic Lemon 1 pcs
- Wheat flour, Type 405 300 g
- Vanilla Sugar 1 packet
- Salt Pinch
- Margarine, vegan 40 g
- Rapeseed oil 0.5 L
- Powdered sugar 3 tbsp
Instructions
- 1. Warm the soy milk in a pot on the stove for about 1 minute until it is lukewarm.
- 2. Crumble the yeast and stir it with 10 grams of sugar into the lukewarm soy milk until dissolved.
- 3. Cover the bowl with the yeast mixture and let it rise in a warm place for about 15 minutes.
- 4. Wash the lemon under hot water and dry it thoroughly.
- 5. Grate about 1 teaspoon of fine zest from the lemon.
- 6. Add the lemon zest, the remaining sugar, the flour, the vanilla sugar, the salt, and the margarine to a large bowl.
- 7. Mix these ingredients with the yeast-soy milk mixture and knead everything into a smooth dough.
- 8. Cover the bowl with a clean, damp kitchen towel.
- 9. Let the dough rise in a warm place for about 1 hour until its volume has doubled.
- 10. Knead the dough once more briefly.
- 11. Dust a work surface with flour and roll out the dough to a thickness of about 1 cm.
- 12. Cut the dough into small diamonds.
- 13. Heat the oil in a small pot carefully.
- 14. Fry the dough pieces in batches in the oil.
- 15. Fry each side for about 1 minute until golden brown.
- 16. Let the finished dough flats drain on kitchen paper.
- 17. Finally, sprinkle them with powdered sugar.
