  1. 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  2. 2. Take a large bowl and add 80 grams of soft vegan spread, 40 grams of sugar, one packet of vanilla sugar, and a pinch of salt.
  3. 3. Add 180 grams of flour.
  4. 4. Process the ingredients with a hand mixer using a dough hook until you have a smooth dough.
  5. 5. Place the dough in the refrigerator for later use.
  6. 6. Peel the rhubarb and cut off the tough ends.
  7. 7. Cut the rhubarb into pieces about 2 centimeters in size.
  8. 8. Place the rhubarb pieces in a separate bowl.
  9. 9. Dust the rhubarb with 2 tablespoons of flour and mix it briefly.
  10. 10. Take a new bowl for the crumble topping.
  11. 11. Add 100 grams of soft vegan spread, 100 grams of sugar, and 100 grams of flour to this bowl.
  12. 12. Knead the ingredients together with your fingers or the mixer to form crumbly streusel.
  13. 13. Place the streusel in the refrigerator for later use as well.
  14. 14. Line a 26-centimeter diameter springform pan with baking paper.
  15. 15. Lightly grease the sides of the pan.
  16. 16. Take the dough out of the refrigerator and roll it out into a circle on a lightly floured surface.
  17. 17. Place the dough circle into the prepared springform pan.
  18. 18. Press the dough so that it covers the bottom and forms a border about 3 centimeters high.
  19. 19. Prick the dough base several times with a fork so that it does not rise.
  20. 20. Distribute the prepared rhubarb pieces evenly over the dough base.
  21. 21. Place the cold streusel evenly over the rhubarb.
  22. 22. Place the pan in the preheated oven and bake the cake for about 60 minutes.
