🍰 Vegan Rhubarb Crumble Cake

Ingredients
- spreadable fat 180 g
- sugar 140 g
- vanilla sugar 1 packet
- salt pinch
- wheat flour, Type 405 300 g
- rhubarb 1 kg
- powdered sugar 1 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Take a large bowl and add 80 grams of soft vegan spread, 40 grams of sugar, one packet of vanilla sugar, and a pinch of salt.
- 3. Add 180 grams of flour.
- 4. Process the ingredients with a hand mixer using a dough hook until you have a smooth dough.
- 5. Place the dough in the refrigerator for later use.
- 6. Peel the rhubarb and cut off the tough ends.
- 7. Cut the rhubarb into pieces about 2 centimeters in size.
- 8. Place the rhubarb pieces in a separate bowl.
- 9. Dust the rhubarb with 2 tablespoons of flour and mix it briefly.
- 10. Take a new bowl for the crumble topping.
- 11. Add 100 grams of soft vegan spread, 100 grams of sugar, and 100 grams of flour to this bowl.
- 12. Knead the ingredients together with your fingers or the mixer to form crumbly streusel.
- 13. Place the streusel in the refrigerator for later use as well.
- 14. Line a 26-centimeter diameter springform pan with baking paper.
- 15. Lightly grease the sides of the pan.
- 16. Take the dough out of the refrigerator and roll it out into a circle on a lightly floured surface.
- 17. Place the dough circle into the prepared springform pan.
- 18. Press the dough so that it covers the bottom and forms a border about 3 centimeters high.
- 19. Prick the dough base several times with a fork so that it does not rise.
- 20. Distribute the prepared rhubarb pieces evenly over the dough base.
- 21. Place the cold streusel evenly over the rhubarb.
- 22. Place the pan in the preheated oven and bake the cake for about 60 minutes.
- 23. Take the cake out of the oven carefully.
- 24. Let the cake cool down completely in the pan.
- 25. Carefully release the cake from the pan.
- 26. Dust the cooled cake with powdered sugar before serving.
