  1. 1. Rinse the quinoa thoroughly in a sieve with lukewarm water.
  2. 2. Bring about 700 milliliters of salted water to a boil in a pot over high heat.
  3. 3. Add the quinoa to the boiling water.
  4. 4. Reduce the heat to low and cook the quinoa for about 12 minutes with a lid on.
  5. 5. Remove the pot from the heat and let the quinoa swell for another 5 minutes.
  6. 6. Wash the pointed cabbage and cut it into quarters.
  7. 7. Remove the hard core from the cabbage.
  8. 8. Slice or shred the cabbage into thin strips.
  9. 9. Peel the carrot and cut off the ends.
  10. 10. Grate the carrot coarsely.
  11. 11. Cut the lemon in half and squeeze one half.
  12. 12. Place the cut cabbage and grated carrot into a bowl.
  13. 13. Salt the vegetables and knead them vigorously.
  14. 14. Drain the liquid released from the vegetables.
  15. 15. Stir vegan mayonnaise into the salad.
  16. 16. Add 1 teaspoon of lemon juice, sugar, and salt.
  17. 17. Season the coleslaw to taste and set it aside.
  18. 18. Mix the cooked quinoa with oat flakes, cornstarch, and mustard in a bowl.
  19. 19. Season the quinoa mixture with salt.
  20. 20. Heat oil in a frying pan over high heat.
  21. 21. Form patties about 2 centimeters thick from the mixture using your hands.
  22. 22. Fry the patties for about 4 minutes on each side until golden brown.
  23. 23. Halve the burger buns.
  24. 24. Toast the bun halves with the cut side down in the hot pan for about 2 minutes until golden brown.
  25. 25. Cut the core off the head of lettuce.
  26. 26. Separate the leaves.
  27. 27. Wash the lettuce leaves and let them drain.
  28. 28. Spread barbecue sauce on the bottom half of the buns.
  29. 29. Top the buns with the quinoa patties, coleslaw, and potato chips.
  30. 30. Close the burger with the top half of the bun.
  31. 31. Serve the vegan quinoa burger.
