🍽️ Vegan Quinoa Burgers with Coleslaw and Potato Chips

Ingredients
- Quinoa 200 g
- Salt Pinch
- Pointed cabbage 0.5 pc.
- Carrots 1 pc.
- Lemons 1 pc.
- Vegan salad mayonnaise 5 tbsp
- Sugar Pinch
- Oat flakes, fine 6 tbsp
- Cornstarch 3 tbsp
- Mustard 1 tbsp
- Oil 3 tbsp
- Hamburger buns 4 pc.
- Mini Romaine 1 pc.
- Grill sauce 4 tbsp
- Potato chips 50 g
Instructions
- 1. Rinse the quinoa thoroughly in a sieve with lukewarm water.
- 2. Bring about 700 milliliters of salted water to a boil in a pot over high heat.
- 3. Add the quinoa to the boiling water.
- 4. Reduce the heat to low and cook the quinoa for about 12 minutes with a lid on.
- 5. Remove the pot from the heat and let the quinoa swell for another 5 minutes.
- 6. Wash the pointed cabbage and cut it into quarters.
- 7. Remove the hard core from the cabbage.
- 8. Slice or shred the cabbage into thin strips.
- 9. Peel the carrot and cut off the ends.
- 10. Grate the carrot coarsely.
- 11. Cut the lemon in half and squeeze one half.
- 12. Place the cut cabbage and grated carrot into a bowl.
- 13. Salt the vegetables and knead them vigorously.
- 14. Drain the liquid released from the vegetables.
- 15. Stir vegan mayonnaise into the salad.
- 16. Add 1 teaspoon of lemon juice, sugar, and salt.
- 17. Season the coleslaw to taste and set it aside.
- 18. Mix the cooked quinoa with oat flakes, cornstarch, and mustard in a bowl.
- 19. Season the quinoa mixture with salt.
- 20. Heat oil in a frying pan over high heat.
- 21. Form patties about 2 centimeters thick from the mixture using your hands.
- 22. Fry the patties for about 4 minutes on each side until golden brown.
- 23. Halve the burger buns.
- 24. Toast the bun halves with the cut side down in the hot pan for about 2 minutes until golden brown.
- 25. Cut the core off the head of lettuce.
- 26. Separate the leaves.
- 27. Wash the lettuce leaves and let them drain.
- 28. Spread barbecue sauce on the bottom half of the buns.
- 29. Top the buns with the quinoa patties, coleslaw, and potato chips.
- 30. Close the burger with the top half of the bun.
- 31. Serve the vegan quinoa burger.
