  1. 1. In a bowl, combine flour, 80 g sugar, salt, and baking powder. Add 70 g spreadable fat at room temperature and 3 tbsp water, then knead everything by hand into a smooth dough. Place the dough in the refrigerator for about 30 minutes.
  2. 2. Meanwhile, melt the remaining spreadable fat in a pot over medium heat. Rinse the lemon thoroughly and grate about 1 tsp of zest. In a bowl, mix soy yogurt, 200 g sugar, vanilla sugar, melted spreadable fat, lemon zest, and vanilla pudding powder well.
  3. 3. Preheat the oven to 175 °C (top/bottom heat). Grease a cake pan. Roll out the dough thinly, line the pan with it, and form a border about 3 cm high. Pour the filling into the pan and bake for approx. 60 minutes.
  4. 4. Carefully remove the cake from the oven, let it cool, and then serve. Enjoy your meal!
