🍰 Vegan Plum Cake with Crumble

Ingredients
- Fat for greasing 180 g
- Sugar 150 g
- Salt pinch
- Wheat flour, Type 405 280 g
- Plums 800 g
- Breadcrumbs 1 tbsp
- Icing sugar 1 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 2. Take 80 grams of soft margarine, 50 grams of sugar, a pinch of salt, and 180 grams of flour.
- 3. Mix these ingredients with a hand mixer and dough hooks until you have a smooth dough.
- 4. Put the dough in the fridge for later use.
- 5. Rinse the plums under running water.
- 6. Cut the plums open and remove the pits.
- 7. Take a separate bowl for the crumble.
- 8. Mix 100 grams of soft margarine, 100 grams of sugar, and 100 grams of flour in it.
- 9. Work the mixture until crumbly streusel are formed.
- 10. Also chill the streusel in the fridge.
- 11. Line a 26-centimeter springform pan with baking paper.
- 12. Grease the sides of the pan with some margarine.
- 13. Take the dough out of the fridge and roll it out into a circle on a floured surface.
- 14. Place the dough circle into the springform pan.
- 15. Press the dough so that it covers the bottom and forms a border about 3 centimeters high.
- 16. Prick the dough base several times with a fork.
- 17. Sprinkle some breadcrumbs evenly over the dough base.
- 18. Place the pitted plums evenly on the dough.
- 19. Distribute the cold streusel generously over the plums.
- 20. Put the pan into the preheated oven.
- 21. Bake the cake for about 60 minutes.
- 22. Take the cake out of the oven carefully.
- 23. Let the cake cool in the pan.
- 24. Dust the finished cake with powdered sugar before serving.
