  1. 1. Peel the onion and slice it into rings.
  2. 2. Halve the radicchio, remove the hard core, and cut the vegetable into bite-sized pieces.
  3. 3. Rinse the radicchio pieces under running water.
  4. 4. Wash the cucumber and cut it in half lengthwise.
  5. 5. Slice the cucumber halves into thin rounds.
  6. 6. Wash the chives and shake them dry.
  7. 7. Cut the chives into fine rings.
  8. 8. Wash the cherry tomatoes and halve them.
  9. 9. Cut the Maultaschen (German ravioli) into strips about two centimeters wide.
  10. 10. Put vinegar, chives, mustard, and sugar into a bowl.
  11. 11. Whisk the ingredients for the dressing well together.
  12. 12. Slowly drizzle three tablespoons of oil into the mixture while stirring.
  13. 13. Continue stirring until the dressing is creamy.
  14. 14. Season the dressing with salt and pepper to taste.
  15. 15. Heat a pan without fat on high heat.
  16. 16. Fry the sunflower seeds for two to three minutes.
  17. 17. Remove the seeds from the pan and place them on a plate to cool down.
  18. 18. Heat two tablespoons of oil in a clean pan on medium heat.
  19. 19. Fry the Maultaschen strips for six to eight minutes until golden brown.
  20. 20. Put radicchio, cucumbers, cherry tomatoes, and onions into a large bowl.
  21. 21. Mix the vegetables with the prepared dressing.
  22. 22. Fold the fried Maultaschen strips into the salad.
  23. 23. Sprinkle the salad with the cooled sunflower seeds and serve.
