🍽️ Vegan Maultaschen Salad Bowl

Ingredients
- yellow onions 1 pc.
- radicchio 1 pc.
- cucumbers 1 pc.
- chives, fresh 10 g
- cherry tomatoes mix 200 g
- vegan maultaschen 800 g
- vinegar 2 tbsp
- mustard 1 tsp
- sugar 1 tsp
- oil 5 tbsp
- salt pinch
- pepper, black ground pinch
- sunflower seeds 4 tbsp
Instructions
- 1. Peel the onion and slice it into rings.
- 2. Halve the radicchio, remove the hard core, and cut the vegetable into bite-sized pieces.
- 3. Rinse the radicchio pieces under running water.
- 4. Wash the cucumber and cut it in half lengthwise.
- 5. Slice the cucumber halves into thin rounds.
- 6. Wash the chives and shake them dry.
- 7. Cut the chives into fine rings.
- 8. Wash the cherry tomatoes and halve them.
- 9. Cut the Maultaschen (German ravioli) into strips about two centimeters wide.
- 10. Put vinegar, chives, mustard, and sugar into a bowl.
- 11. Whisk the ingredients for the dressing well together.
- 12. Slowly drizzle three tablespoons of oil into the mixture while stirring.
- 13. Continue stirring until the dressing is creamy.
- 14. Season the dressing with salt and pepper to taste.
- 15. Heat a pan without fat on high heat.
- 16. Fry the sunflower seeds for two to three minutes.
- 17. Remove the seeds from the pan and place them on a plate to cool down.
- 18. Heat two tablespoons of oil in a clean pan on medium heat.
- 19. Fry the Maultaschen strips for six to eight minutes until golden brown.
- 20. Put radicchio, cucumbers, cherry tomatoes, and onions into a large bowl.
- 21. Mix the vegetables with the prepared dressing.
- 22. Fold the fried Maultaschen strips into the salad.
- 23. Sprinkle the salad with the cooled sunflower seeds and serve.
