🍰 Vegan Marble Cake with Chocolate Peanut Glaze

Ingredients
- Vemondo vegan egg replacer 3 tbsp
- mineral water, classic 70 ml
- margarine, vegan 120 g
- sugar 180 g
- vanilla sugar 1 packet
- salt pinch
- oat drink 200 ml
- wheat flour, Type 405 350 g
- cornstarch 30 g
- baking powder 1 packet
- cocoa powder 3 tbsp
- chocolate, dark 100 g
- peanut butter 2 tbsp
- peanuts, roasted and salted 4 tbsp
Instructions
- 1. Preheat the oven to 170 degrees Celsius with fan.
- 2. Whisk the egg replacer, mineral water, soft margarine, sugar, vanilla sugar, and a pinch of salt in a bowl with a hand mixer until frothy.
- 3. Add 150 milliliters of oat drink, flour, cornstarch, and baking powder to the mixture and stir well.
- 4. Grease a bundt cake pan and dust it with flour.
- 5. Pour three quarters of the batter into the prepared pan.
- 6. Smoothly mix the remaining batter with 50 milliliters of oat drink and cocoa in a separate bowl.
- 7. Pour the dark batter into the pan on top of the light batter.
- 8. Draw a few lines through the batter with a fork to create a marble effect.
- 9. Bake the cake in the oven for about 45 minutes.
- 10. Roughly chop the chocolate and place it in a pot.
- 11. Warm the pot on low heat and melt the chocolate together with the peanut butter.
- 12. Remove the pot from the heat as soon as the glaze is liquid.
- 13. Roughly chop the peanut kernels.
- 14. Take the cake out of the oven and carefully turn it out onto a cooling rack.
- 15. Let the cake cool down for a short while.
- 16. Pour the chocolate peanut glaze over the cake.
- 17. Sprinkle the chopped peanuts over it.
- 18. Let the cake cool completely.
- 19. Slice the cake and serve it.
