  6. 6. Remove the thick stems from the parsley.
  7. 7. Place the parsley in the mixing bowl.
  8. 8. Chop the parsley for 4 seconds on speed 8.
  9. 9. Transfer the chopped parsley into a separate bowl.
  10. 10. Add the carrot, onion, and garlic to the mixing bowl.
  11. 11. Chop the vegetables for 5 seconds on speed 8.
  12. 12. Scrape down the sides of the bowl with a spatula.
  13. 13. Add 2 tablespoons of oil.
  14. 14. Sauté the vegetables for 4 minutes on the sauté setting.
  15. 15. Add the lentils, vegetable broth, thyme, 0.5 teaspoon of salt, and some pepper.
  16. 16. Cook the mixture for 10 minutes at 100 degrees Celsius on speed 1.
  17. 17. Add the breadcrumbs and the reserved parsley.
  18. 18. Mix everything for 20 seconds on speed 4.

  20. 20. Let the mixture rest to allow it to set.

  30. 30. Whisk the soy yogurt with the mustard in a bowl.
  31. 31. Season the sauce with salt and pepper.
  32. 32. Shape four equal-sized patties from the lentil mixture.
  33. 33. Add 3 tablespoons of oil to a frying pan.
  34. 34. Fry the patties for about 3 to 4 minutes until crispy.
  35. 35. Toast the burger buns as desired.
  36. 36. Spread the sauce on the cut side of the buns.
  37. 37. Top the buns with spinach, tomato, avocado, onions, and the lentil patty.
  38. 38. Place the top half of the bun on the burger.
  39. 39. Serve the vegan lentil burger.
