🍽️ Crispy Vegan Lentil Burgers

Ingredients
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- carrots 1 pc.
- parsley, fresh 10 g
- oil 5 tbsp
- lentils, red 150 g
- vegetable broth 200 g
- thyme, ground 0.25 tsp
- salt pinch
- pepper, black ground pinch
- breadcrumbs 60 g
- baby spinach 75 g
- onions, red 1 pc.
- vine tomatoes 1 pc.
- avocado 1 pc.
- soy yogurt 150 g
- mustard 1 tbsp
- hamburger buns 4 pc.
Instructions
- 1. Halve one yellow onion and peel it.
- 2. Peel the garlic clove.
- 3. Peel the carrot and cut off the ends.
- 4. Cut the carrot into rough chunks.
- 5. Wash the parsley and shake it dry.
- 6. Remove the thick stems from the parsley.
- 7. Place the parsley in the mixing bowl.
- 8. Chop the parsley for 4 seconds on speed 8.
- 9. Transfer the chopped parsley into a separate bowl.
- 10. Add the carrot, onion, and garlic to the mixing bowl.
- 11. Chop the vegetables for 5 seconds on speed 8.
- 12. Scrape down the sides of the bowl with a spatula.
- 13. Add 2 tablespoons of oil.
- 14. Sauté the vegetables for 4 minutes on the sauté setting.
- 15. Add the lentils, vegetable broth, thyme, 0.5 teaspoon of salt, and some pepper.
- 16. Cook the mixture for 10 minutes at 100 degrees Celsius on speed 1.
- 17. Add the breadcrumbs and the reserved parsley.
- 18. Mix everything for 20 seconds on speed 4.
- 19. Transfer the lentil mixture into a bowl.
- 20. Let the mixture rest to allow it to set.
- 21. Wash the baby spinach and let it drain.
- 22. Peel the red onion.
- 23. Slice the red onion into rings.
- 24. Wash the tomatoes.
- 25. Remove the core from the tomatoes.
- 26. Slice the tomatoes.
- 27. Halve the avocado and remove the pit.
- 28. Scoop out the avocado flesh with a spoon.
- 29. Slice the avocado flesh.
- 30. Whisk the soy yogurt with the mustard in a bowl.
- 31. Season the sauce with salt and pepper.
- 32. Shape four equal-sized patties from the lentil mixture.
- 33. Add 3 tablespoons of oil to a frying pan.
- 34. Fry the patties for about 3 to 4 minutes until crispy.
- 35. Toast the burger buns as desired.
- 36. Spread the sauce on the cut side of the buns.
- 37. Top the buns with spinach, tomato, avocado, onions, and the lentil patty.
- 38. Place the top half of the bun on the burger.
- 39. Serve the vegan lentil burger.
