🍰 Vegan Chocolate Lava Cakes with Vanilla Ice Cream

Ingredients
- chocolate, dark 150 g
- sugar 80 g
- vanilla sugar 1 packet
- salt pinch
- Vemondo vegan egg substitute 2 tbsp
- water with carbonation 100 ml
- wheat flour, Type 405 150 g
- oat drink Barista 200 ml
- cocoa powder 4 tbsp
- baking powder 0.5 packet
- mint, fresh 5 g
- powdered sugar 1 tbsp
- vegan vanilla ice cream 4 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Bring about 500 milliliters of water to a boil in a pot.
- 3. Roughly chop 100 grams of chocolate.
- 4. Place the chocolate pieces in a metal bowl.
- 5. Place the metal bowl over the hot water so that it touches the steam.
- 6. Let the chocolate melt completely in the bowl.
- 7. Stir sugar, vanilla sugar, and a pinch of salt into the melted chocolate.
- 8. Whisk the egg substitute with water and carbonated water in a separate bowl.
- 9. Thoroughly mix the chocolate mixture, flour, barista oat drink, egg substitute mixture, cocoa, and baking powder.
- 10. Grease the muffin tin.
- 11. Distribute the batter evenly among the compartments of the muffin tin.
- 12. Place a piece of chocolate in the center of each lava cake.
- 13. Bake the cakes for about 15 minutes in the oven.
- 14. Wash the mint.
- 15. Shake the mint dry.
- 16. Pluck the mint leaves from the stems.
- 17. Dust the warm vegan lava cakes with powdered sugar.
- 18. Serve the cakes with Vemondo vanilla ice cream and garnish with the mint leaves.
