🍰 Vegan Cherry Crumble Cake

Ingredients
- vegan margarine 300 g
- sugar 200 g
- wheat flour, Type 405 350 g
- ground hazelnut kernels 150 g
- baking powder 0.5 packet
- oat drink 150 ml
- vinegar 1 tbsp
- fresh cherries 1 kg
- vanilla sugar 5 packet
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Beat 200 grams of soft margarine in a bowl with a hand mixer and whisk until foamy.
- 3. Add 150 grams of sugar and stir the mixture until creamy.
- 4. Add 150 grams of flour, 150 grams of ground hazelnuts, baking powder, 150 milliliters of oat drink, and vinegar.
- 5. Mix all ingredients into a smooth dough.
- 6. Spread the dough onto a baking sheet lined with baking paper.
- 7. Bake the dough base in the oven for about 20 minutes.
- 8. Wash the cherries in the meantime and halve them.
- 9. Remove the pits from the cherries.
- 10. Mix 100 grams of margarine, vanilla sugar, 50 grams of sugar, and 200 grams of flour in a bowl with your hands.
- 11. Knead the ingredients into a loose crumble mixture.
- 12. Distribute the cherries and the crumble mixture evenly over the pre-baked dough.
- 13. Bake the cake for another 20 minutes until golden brown.
- 14. Take the cake out of the oven and let it cool slightly.
- 15. Cut the cake into pieces and serve it.
- 16. Garnish the cake as desired with powdered sugar or a glaze made from powdered sugar and lemon.
