🍰 Vegan Kaiserschmarrn with warm cherries

Ingredients
- Vanilla Sugar 2 packets
- Sugar 5 tbsp
- Vemondo vegan egg replacer 2 tbsp
- Baking powder 2 packets
- Wheat flour, Type 405 400 g
- Oat drink Barista 600 ml
- Mineral water, classic 150 ml
- Margarine, vegan 4 tbsp
- Sour cherries in a jar 700 g
- Water 100 ml
- Vanilla pudding powder 1 packet
- Icing sugar 1 tbsp
Instructions
- 1. Add vanilla sugar, 3 tablespoons of sugar, 2 tablespoons of Vemondo egg replacer, baking powder, and flour to a large bowl.
- 2. Mix the dry ingredients using a hand mixer with a whisk attachment.
- 3. Pour in oat milk suitable for baristas and mineral water.
- 4. Beat the batter quickly until it is airy and smooth.
- 5. Melt 2 tablespoons of margarine in a frying pan over medium heat.
- 6. Pour half of the batter into the hot pan.
- 7. Fry the batter for about 8 minutes until golden yellow.
- 8. Wait until small bubbles form on the surface.
- 9. Halve the batter using a spatula.
- 10. Flip the pieces of batter.
- 11. Fry the other side for another 2 minutes.
- 12. Break the finished batter into pieces using the spatula.
- 13. Dust the pieces with 1 teaspoon of sugar.
- 14. Caramelize the Kaiserschmarrn for about 2 minutes until golden brown.
- 15. Turn the pieces regularly during this process.
- 16. Transfer the Kaiserschmarrn to a plate.
- 17. Repeat the process with the remaining batter.
- 18. Drain the sour cherries into a sieve.
- 19. Catch the cherry liquid in a bowl.
- 20. Add 100 milliliters of water, vanilla pudding powder, and 1 tablespoon of sugar to the liquid.
- 21. Stir the mixture until smooth.
- 22. Pour the mixture into a saucepan.
- 23. Heat the mixture over medium heat.
- 24. Stir constantly until the mixture comes to a boil.
- 25. Continue cooking until a pudding-like consistency forms.
- 26. Fold the drained sour cherries into the pudding mixture.
- 27. Set the cherry mixture aside.
- 28. Plate the Kaiserschmarrn.
- 29. Dust the pastry with powdered sugar.
- 30. Serve the Kaiserschmarrn with the warm cherries.
