  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Place the potatoes in a pot with salted water.
  3. 3. Bring the water to a boil.
  4. 4. Cook the potatoes on medium heat for about 20 minutes.
  5. 5. Slice the smoked tofu into thin pieces.
  6. 6. Slice the Vemondo bratwurst into pieces about 2 cm thick.
  7. 7. Halve the onions and peel them.
  8. 8. Dice the onions finely.
  9. 9. Wash the kale.
  10. 10. Spin the kale dry.
  11. 11. Chop the kale roughly.
  12. 12. Heat 2 tablespoons of oil in a pot on high heat.
  13. 13. Sauté the onion cubes for about 2 minutes.
  14. 14. Add the kale to the pot.
  15. 15. Deglaze the dish with vegetable broth.
  16. 16. Simmer the covered kale for about 30 minutes on medium heat.
  17. 17. Heat 2 tablespoons of oil in a frying pan on high heat.
  18. 18. Fry the smoked tofu and bratwurst on all sides for about 5 minutes.
  19. 19. Add the fried smoked tofu to the kale.
  20. 20. Add the fried bratwurst to the kale.
  21. 21. Add 2 tablespoons of mustard to the kale.
  22. 22. Add oat flakes to the kale.
  23. 23. Stir everything well.
  24. 24. Season with salt and pepper.
  25. 25. Let the dish sit covered for another 10 minutes.
  26. 26. Heat another 2 tablespoons of oil in the frying pan on high heat.
  27. 27. Drain the potatoes using the lid.
  28. 28. Add the potatoes to the hot pan.
  29. 29. Fry the potatoes on all sides for about 3 minutes.
  30. 30. Reduce the heat to low.
  31. 31. Add sugar to the potatoes.
  32. 32. Stir only after the sugar has completely melted.
  33. 33. Caramelize the potatoes until golden brown for about 5 minutes.
  34. 34. Divide the kale among the plates.
  35. 35. Divide the caramelized potatoes among the plates.
  36. 36. Serve each plate with 1 tablespoon of mustard.
