🍽️ Vegan Kale with Smoked Tofu, Bratwurst, and Caramelized Potatoes

Ingredients
- small potatoes, mainly firm 1 kg
- salt pinch
- smoked tofu 175 g
- vegan frying sausage 3 pcs.
- onions, yellow 2 pcs.
- kale, fresh 500 g
- oil 6 tbsp
- vegetable broth 300 ml
- mustard 6 tbsp
- oats, fine 2 tbsp
- pepper, black ground pinch
- sugar 2 tbsp
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Place the potatoes in a pot with salted water.
- 3. Bring the water to a boil.
- 4. Cook the potatoes on medium heat for about 20 minutes.
- 5. Slice the smoked tofu into thin pieces.
- 6. Slice the Vemondo bratwurst into pieces about 2 cm thick.
- 7. Halve the onions and peel them.
- 8. Dice the onions finely.
- 9. Wash the kale.
- 10. Spin the kale dry.
- 11. Chop the kale roughly.
- 12. Heat 2 tablespoons of oil in a pot on high heat.
- 13. Sauté the onion cubes for about 2 minutes.
- 14. Add the kale to the pot.
- 15. Deglaze the dish with vegetable broth.
- 16. Simmer the covered kale for about 30 minutes on medium heat.
- 17. Heat 2 tablespoons of oil in a frying pan on high heat.
- 18. Fry the smoked tofu and bratwurst on all sides for about 5 minutes.
- 19. Add the fried smoked tofu to the kale.
- 20. Add the fried bratwurst to the kale.
- 21. Add 2 tablespoons of mustard to the kale.
- 22. Add oat flakes to the kale.
- 23. Stir everything well.
- 24. Season with salt and pepper.
- 25. Let the dish sit covered for another 10 minutes.
- 26. Heat another 2 tablespoons of oil in the frying pan on high heat.
- 27. Drain the potatoes using the lid.
- 28. Add the potatoes to the hot pan.
- 29. Fry the potatoes on all sides for about 3 minutes.
- 30. Reduce the heat to low.
- 31. Add sugar to the potatoes.
- 32. Stir only after the sugar has completely melted.
- 33. Caramelize the potatoes until golden brown for about 5 minutes.
- 34. Divide the kale among the plates.
- 35. Divide the caramelized potatoes among the plates.
- 36. Serve each plate with 1 tablespoon of mustard.
