🍽️ Vegan Döner Skewers with Grilled Vegetables

Ingredients
- Zucchini 1 pc.
- Eggplants 1 pc.
- Salt pinch
- Carrots 1 pc.
- Pepper, red 1 pc.
- Olive oil 4 tbsp
- Pepper, black ground pinch
- Oregano, dried 1 tbsp
- Vine tomatoes 2 pc.
- Cucumbers 0.5 pc.
- Parsley, fresh 25 g
- Balsamic vinegar, light 1 tbsp
- Soy yogurt 200 g
- Garlic, granulated 0.5 tsp
- Flatbread 1 pc.
Instructions
- 1. Wash the zucchini and the eggplant thoroughly.
- 2. Cut off the hard ends of the zucchini and the eggplant.
- 3. Slice the zucchini and eggplant diagonally into thick rounds.
- 4. Lightly salt the cut vegetables.
- 5. Peel the carrot.
- 6. Remove the ends of the carrot.
- 7. Slice the carrot diagonally as well.
- 8. Wash the bell pepper.
- 9. Halve the bell pepper lengthwise.
- 10. Remove the stem and seeds from the bell pepper.
- 11. Quarter the deseeded bell pepper.
- 12. Place all the prepared vegetables into a large bowl.
- 13. Add two tablespoons of olive oil.
- 14. Season with salt and pepper to taste.
- 15. Add some oregano.
- 16. Toss the vegetables well with the spices and oil.
- 17. Wash the tomatoes.
- 18. Dice the tomatoes into small pieces.
- 19. Wash the cucumber.
- 20. Remove the ends of the cucumber.
- 21. Quarter the cucumber lengthwise.
- 22. Cut the cucumber quarters into bite-sized pieces.
- 23. Wash the parsley.
- 24. Shake the parsley dry.
- 25. Remove the coarse stems from the parsley.
- 26. Finely chop the parsley.
- 27. Place the diced tomatoes, cucumber pieces, and parsley into a separate bowl.
- 28. Add two tablespoons of olive oil to the bowl.
- 29. Add one tablespoon of vinegar.
- 30. Season the salad with salt and pepper.
- 31. Mix the salad well and adjust the seasoning.
- 32. Place the soy yogurt into a small bowl.
- 33. Season the soy yogurt with salt and pepper.
- 34. Add some garlic powder.
- 35. Stir the soy yogurt well and adjust the seasoning.
- 36. Quarter the flatbread.
- 37. Cut slits lengthwise into the flatbread quarters.
- 38. Ensure the bread remains connected at the bottom edge.
- 39. Preheat the grill.
- 40. Place the seasoned vegetables on the grill.
- 41. Grill the vegetables for about five to eight minutes.
- 42. Grill the vegetables until golden brown.
- 43. Place the flatbread on the grill.
- 44. Warm the flatbread for about two minutes.
- 45. Fill the flatbread with the grilled vegetables.
- 46. Add the tomato and cucumber salad.
- 47. Drizzle the garlic soy yogurt over the filling.
- 48. Serve the vegan Döner immediately.
